Ingredients
- 1 cup oat flour
- 1/3 cup unsweetened cocoa powder
- 1/4 cup granulated sugar
- 3/4 teaspoon baking soda
- 1 cup zucchini finely shredded
- 1 teaspoon vanilla extract
- 1/4 cup maple syrup
- 1/8 teaspoon salt
- 1/2 cup dates pitted and chopped
- 3/4 cup hot water

- Place the whole dates in small bowl and pour hot water over them allowing them to soak until soft (about 30 minutes)
- Preheat oven to 350 degrees F. Prepare an 8x8 baking dish with lined parchment paper.
- Blend soaked dates (undrained) with finely shredded zucchini, maple syrup, and vanilla until smooth and set aside.
- Combine oat flour, cocoa powder, sugar, baking soda, and salt in bowl and stir together. Add in blended date and zucchini mixture until all is moistened.
- Pour thick batter into prepared pan and bake for 25 minutes or until brownies are no longer liquid in the middle and edges are firm.
- Allow to cool before eating!
