Ingredients
Dressing
- 1/4 cup olive oil
- 1/4 cup diced red onion
- 1/4 cup white wine vinegar
- 1/4 cup cilantro chopped
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
Salad
- 4 cups Corn off the cob or frozen (defrosted)
- 1 cup cherry tomatoes sliced
- 1 green bell pepper diced
- Zest of 1 lemon about 3 tablespoons
- juice of 1 lemon about 3 tablespoons
- 1/2 avocado diced
- 1/3 cup green onion diced
Servings: 1 cup servings

- Wash hands and clean preparation area.
- Combine all dressing ingredients into a bowl and mix. Set aside.
- In a large bowl combine all other salad ingredients.
- Pour mixed dressing over other salad ingredients and mix well.
