Smokey Pork Tenderloin Tacos

Any day is a taco day!!  These Smokey Pork Tenderloin Tacos are a special treat for a weekend meal. You can even double up the recipe and prep your meals for the week to come.  Don’t forget to add the fresh salsa verde and a squeeze of lime for extra flavor.Smokey Pork Tenderloin Tacos

Ingredients
Rub Ingredients
  • 1 tbsp chili powder
  • 1 tbsp sugar
  • 1/2 tbsp paprika
  • 1/2 tbsp white pepper
  • 1 tsp black pepper
Taco Ingredients
  • 1 pork tenderloin about 2-3 lbs
  • 8 corn tortillas
  • 2 avocados pitted and thinly sliced
  • 1/2 cup salsa
  • 8 sprigs cilantro finely chopped, about 2 tbsp

Instructions
  1. Preheat oven to 325°F degrees.
  2. Pat tenderloin dry with paper towel.
  3. Put meat into bowl, rolling it in the Rub mixture until it is coated evenly.
  4. Cover the meat with wax paper or plastic wrap and let sit at room temperature for 10 minutes, no longer
  5. Place the meat in heavy duty aluminum foil and fold foil to make a sealed pouch.
  6. Place tenderloin in baking dish or pan and put into oven.
  7. Bake for 2 hours or until it shreds with a fork.
  8. Transfer meat to a serving dish and let rest for 5 minutes.
  9. Warm the tortillas by loosely wrapping them in a damp paper towel and microwave on high for 30 to 45 seconds.
  10. Shred with fork or slice tenderloin into very thin pieces and serve hot with warm tortillas, avocados, salsa, and cilantro in separate bowls so all family members can make their own tacos

Ingredients
  • 3/4 lb lean chuck or round ground beef
  • 1/2 cup chopped onion
  • 1/2 cup diced tomatoes unsalted
  • 1 medium green bell pepper chopped
  • 1 (2 1/4 ounce) can sliced ripe olives drained
  • 1 tsp chili powder
  • 1 tsp minced garlic
  • 1/2 tsp ground cumin
  • 1 (1 pound) loaf French bread unsliced
  • 1 cup low fat sharp cheddar cheese shredded

  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Drain. Stir in tomatoes, green pepper, olives, salt, chili powder, garlic and cumin. Remove from heat.
  2. Cut bread in half lengthwise.
  3. Place on baking sheet.
  4. Spread meat mixture over cut slices.
  5. Sprinkle with cheese.
  6. Bake at 450°F for 10-15 minutes or until cheese is melted.
  7. Cook’s note: This recipe serves 8 so you may have enough for lunch the next day. To reheat, wrap in foil and heat in a 350° F oven for 10-15 minutes or until hot. This results in French bread that is soft. If you prefer crispy bread, place the loaf on a baking sheet and bake 10-15 minutes or until hot.

  • 1 egg white large
  • 2 Tablespoons honey
  • 2 1/4 cups unsalted mixed nuts
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin ground
  • 1 teaspoon coriander ground
  • 1/2 teaspoon chili powder

  1. Preheat oven to 300 degrees Fahrenheit.
  2. Whisk water, egg white, honey in a large bowl. Add nuts and toss well to coat. Add the next 5 ingredeints and make sure the nuts are coated evenly.

Quinoa Cakes

Trying a new whole grain can be intimidating, especially when the name is difficult to pronounce. Quinoa (pronounced keen-wa) is a grain growing in popularity due to its nutritional value. Quinoa has more fiber and twice as much protein as any other grain. It can be used in a variety of dishes including burgers, stir-fries, breakfast bowls, and even pizza crust.

Today’s recipe uses quinoa, black beans, and cottage cheese. I love making this for on-the-road meals. These would also be a great option for kiddos who are in sports activities and need a quick meal before practice. You can freeze the mini cakes for up to 3 months and use them as needed. So instead of driving through the fast-food line, grab a protein-packed Quinoa Cake! Enjoy!

Ingredients
  • 2 cups water
  • 1 cup quinoa
  • 2 eggs and 2 egg whites lightly beaten
  • 1 cup canned black beans, drained and rinsed
  • 3/4 cup cottage cheese, reduced fat
  • 1/4 cup scallions sliced
  • 2 Tablespoons whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 3/4 cup shredded cheese, reduced fat

  1. Preheat oven to 375 degrees F. Place 12 liners in a muffin tin and spray with cooking spray
  2. Bring water to a boil in a medium saucepan. Stir in quinoa. Reduce to a simmer, cover and cook until the grains are tender and fluffy. Let cool for about 10 minutes and transfer to a large bowl.
  3. Add eggs, beans, cottage cheese, scallions, flour, baking powder, salt and spices. Stir until combined. Fold in shredded cheese.
  4. Bake the cakes until slightly brown on top (20-25 minutes). Let cool for 5-10 minutes. Serve with your favorite salsa and avocado.
