Ingredients
  • 2 Tbsp. olive oil
  • 1 lb. pork shoulder cubed
  • 1 onion diced
  • 2 guajillo or ancho peppers diced
  • 2 cloves garlic
  • 3 tsp. dried oregano
  • 1 tsp. cumin
  • 3 tsp. black pepper
  • 2 cups low sodium chicken broth
  • 1 15 -oz. can golden or white hominy drained
  • 1 4-oz. can diced green chilies
Garnishes
  • Sliced avocado
  • chopped cilantro
  • Diced onions
  • Sliced radishes

Instructions
  1. Wash your hands and clean your cooking area. In a large saucepan, heat olive oil on high heat. Add pork and sear on all sides. Continue cooking pork until internal temperature reaches at least 160 ° F.
  2. Add onions, peppers, garlic, oregano, cumin, and black pepper. Cook until the onions are translucent.
  3. Add chicken broth. When he broth starts to boil, turn down the heat and simmer for 30 minutes.
  4. Stir in hominy and green chilies; cook until pork meat is tender and stew thickens, about 30 more minutes.
  5. Serve soup hot, with garnishes.

Ingredients
  • 1 (15.5 ounce) can no salt black beans rinsed and drained
  • 1 cup shredded, cooked chicken breast
  • 4 large green onions sliced
  • 1 cup salsa
  • 3/4 cup diced tomatoes
  • 1 1/2 tsp ground cumin
  • 3/4 cup shredded, reduced fat Mexican blend cheese divided
  • 2 (7 inch) corn tortillas torn into small pieces
  • 1/4 cup chopped cilantro

Instructions
  1. Heat oven to 375 degrees F.
  2. Place beans in large bowl; partially mash with potato masher.
  3. Add chicken, green onions, salsa, tomato and cumin; mix well.
  4. Spoon 1 1/3 cups mixture into 9-inch round glass baking dish; top with 1/2 cup cheese.
  5. Arrange 1/2 of tortillas over mixture.
  6. Repeat layering with 1 1/3 cups bean mixture, remaining tortillas.
  7. Cover dish with foil and bake 30 minutes or until heated through. Remove from oven, uncover and top with remaining 1/4 cup cheese.
  8. Return to oven and continue to bake 5 minutes or until cheese is melted.
  9. Remove from oven and top with cilantro.
