Ingredients
  • 4 (4 ounce) boneless, skinless chicken breast
  • 1 1/2 cups sliced fresh mushrooms
  • 2 tablespoons sliced green onion
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1/4 cup dry Marsala
  • 1/4 teaspoon pepper

Instructions
  1. Place each chicken breast between two pieces of plastic wrap and lightly pound with a meat mallet or rolling pin to approximately 1/4 inch thickness.
  2. Coat a large skillet with nonstick cooking spray. Cook chicken over medium heat for 4-6 minutes or until chicken is no longer pink, turning once to brown evenly. Transfer chicken to patter and keep warm.
  3. In the same skillet, add mushrooms, green onions, water and salt. Cook over medium heat until mushrooms are tender and most of the liquid has evaporated. Add Marsala and heat through. Spoon sauce over chicken and serve.
  4. Serve this dish with whole grain pasta and a side salad for a complete meal.

Parmesan Celery Salad

This is a simple recipe that makes a great side dish for dinner! The combination of celery and pecans might seem odd but they are perfectly combined in this dish. The pecans and nuts in general are full of protein, fiber, vitamins, minerals, and antioxidants and the American Heart Association recommends nuts as part of a healthy dietary pattern.

Ingredients
  • 8 sticks celery
  • 1 cup pecans toasted and chopped
  • 1/4 cup sliced green onion
  • 1 tbsp whole grain mustard
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 cup shaved Parmesan cheese

  1. Chop celery and place in large bowl.
  2. Toast pecans and add to celery.
  3. Whisk together green onion, mustard, lemon juice, and olive oil.
  4. Pour over celery and pecans.
  5. Top with shaved Parmesan cheese.
