Soft Pumpkin Spice Drops

These tasty cookies are also a great way to help keep Santa slim and for everyone to enjoy a healthier dessert this holiday season.

Ingredients
  • 1 large egg
  • 1/4 cup applesauce unsweetened
  • 1/4 cup brown sugar
  • 2 Tablespoons butter melted
  • 1/3 cup pumpkin puree
  • 1/2 cup oat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice

Instructions
  1. Preheat oven to 375 degrees.
  2. Clean your area and wash your hands before you begin
  3. Beat egg in a medium bowl. Add applesauce, brown sugar, melted butter, and pumpkin puree. Whisk to combine.
  4. In a separate large bowl, stir together oat flour, all-purpose flour, baking soda, and pumpkin spice.
  5. Gently combine wet ingredients with dry ingredients. Stir until incorporated.
  6. Using a parchment lined baking sheet, drop cookies by the tablespoon. Place in oven and bake 10-12 minutes depending on oven.
