Ingredients
Marinated White Beans
  • 15 ounce canned white beans drained and rinsed
  • 2 Tablespoons parsley chopped
  • 2 Tablespoons oregano chopped
  • 2 Tablespoons basil chopped
  • 1/4 cup roasted jarred red peppers diced
  • 2 Tablespoons shallot finely diced
  • 6 ounce jar artichoke hearts chopped
  • 1 garlic cloves minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon lemon zest
  • 1 1/2 Tablespoons lemon juice
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground black pepper

  • 6 Garlic and Herb Tortillas
  • 10 ounces cooked chicken cubed or shredded
  • 2 Cups Spinach cut into bite-sized pieces

Instructions
  1. Wash hands and sanitize the preparation area.
  2. In a mixing bowl, combine white beans, parsley, oregano, basil, red peppers, shallot, artichoke hearts, garlic, olive oil, lemon zest and juice, red pepper flakes, salt and pepper.
  3. Cover with air-tight lid and refrigerate for at least 8 hours to allow flavors to develop.
  4. To assemble wraps, start by laying out tortillas.
  5. Add cooked chicken to center of tortilla, dividing evenly between each wrap.
  6. Top chicken with 1/2 cup marinated white beans.
  7. Add spinach on top of white beans.
  8. To fold wrap, fold in the left and right sides and then roll up wrap from the bottom. Cut wraps in half diagonally and serve.
  9. NOTES Wrap Storage: Wrap each chicken wrap individually or place in air-tight container and store in the refrigerator until ready to serve for easy, premade lunches. Marinated Bean Storage: Prepared Beans will stay fresh in the refrigerator for 3-4 days.

Ingredients
  • 2 pounds skinless chicken pieces (thighs and legs)
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1 tablespoon olive oil
  • 12 cloves garlic crushed, skin removed
  • 1 yellow onion chopped
  • 1 shallot chopped
  • juice of 1 lemon
  • 1 tablespoon fresh thyme leaves
  • 4 sprigs of thyme
  • 2 ounces green olives drained and chopped (about 1/3 cup)

Instructions
  1. Wash your hands and clean your preparation area.
  2. Preheat your oven to 350 degrees, season the chicken with the salt and pepper.
  3. Heat up the olive oil in a cast iron or oven safe skillet. Once heated, place your chicken pieces in a single layer in your skillet and sear until golden brown, about 5 minutes.
  4. Add in the crushed garlic cloves and continue to cook until garlic becomes fragrant. Remove the chicken and garlic from the skillet.
  5. Add the onion and shallot to the skillet and stir until the onions and shallots have softened, about 3 minutes.
  6. Place your chicken pieces and garlic back in the pan in a single layer and sprinkle the thyme leaves on top of the chicken. Arrange the olives between the chicken pieces and top with the sprigs of thyme.
  7. Bake for 45 minutes or until the chicken reaches the internal temperature of 165 degrees. Remove from the oven and serve.

Ingredients
  • 1 medium eggplant 1/4 inch thick slices
  • 2 tablespoons olive oil divided
  • 8 ounces whole wheat penne pasta cooked
  • 8 ounces mushrooms sliced
  • 1 shallot diced
  • 1 medium zucchini squash sliced
  • 3 garlic cloves minced
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 2 medium tomatoes diced
  • 1 tablespoon oregano
  • 1 tablespoon parsley flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
  1. Clean your preparation area and wash hands
  2. Preheat oven to 400⁰ F.
  3. Spread 1 tablespoon of olive oil across the bottom of a lined baking sheet and arrange sliced eggplant.
  4. Bake eggplant for 20 minutes or until tender and lightly browned.
  5. While eggplant bakes, place a large skillet over medium heat and add 1tbs olive oil. Add the sliced mushrooms, diced shallot, sliced zucchini, and minced garlic into skillet and cook for 5 minutes.
  6. Add water and lemon juice and cook for 4 minutes. Add diced tomatoes, parsley flakes, oregano, salt, and pepper. Bring to a boil and simmer for 5 minutes.
  7. Add roasted eggplant and cook until all veggies are tender; about 5 minutes.
  8. Remove from heat and serve over cooked whole wheat penne pasta.
