Ingredients
Marinated White Beans
  • 15 ounce canned white beans drained and rinsed
  • 2 Tablespoons parsley chopped
  • 2 Tablespoons oregano chopped
  • 2 Tablespoons basil chopped
  • 1/4 cup roasted jarred red peppers diced
  • 2 Tablespoons shallot finely diced
  • 6 ounce jar artichoke hearts chopped
  • 1 garlic cloves minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon lemon zest
  • 1 1/2 Tablespoons lemon juice
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground black pepper
Wrap
  • 6 Garlic and Herb Tortillas
  • 10 ounces cooked chicken cubed or shredded
  • 2 Cups Spinach cut into bite-sized pieces

Instructions
  1. Wash hands and sanitize the preparation area.
  2. In a mixing bowl, combine white beans, parsley, oregano, basil, red peppers, shallot, artichoke hearts, garlic, olive oil, lemon zest and juice, red pepper flakes, salt and pepper.
  3. Cover with air-tight lid and refrigerate for at least 8 hours to allow flavors to develop.
  4. To assemble wraps, start by laying out tortillas.
  5. Add cooked chicken to center of tortilla, dividing evenly between each wrap.
  6. Top chicken with 1/2 cup marinated white beans.
  7. Add spinach on top of white beans.
  8. To fold wrap, fold in the left and right sides and then roll up wrap from the bottom. Cut wraps in half diagonally and serve.
  9. NOTES Wrap Storage: Wrap each chicken wrap individually or place in air-tight container and store in the refrigerator until ready to serve for easy, premade lunches. Marinated Bean Storage: Prepared Beans will stay fresh in the refrigerator for 3-4 days.

Ingredients
  • 12 ounces spaghetti whole wheat, dry
  • 2 ounces or approx. 4 slices - Black Forest Ham cut into 1-in. squares
  • 1 cup low-fat swiss cheese shredded
  • 3 cups green beans fresh, trimmed and cut in 1-in pieces
  • 2 Tablespoons garlic clove minced
  • 1 Tablepsoon dijon mustard
  • 1 Tablespoon olive oil
  • 1/2 cup parsley fresh, chopped
  • 1 teaspoon basil dried
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder

  1. In a large pot, boil water. Add whole wheat spaghetti and cook until al dente. Keep 1 cup of pasta water to use later; drain the rest.
  2. In a large saucepan at medium heat, combine olive oil and garlic. Stir to evenly cook until garlic is lightly golden brown; approximately 3-5 minutes.
  3. Add ham and cook, stirring continuously, for 1-2 minutes. Next, add green beans, black pepper, onion powder and dried basil leaves. Stir until well incorporated.
  4. Cover and let green beans cook at low heat for 5-7 minutes. Stir occasionally to avoid garlic and ham from burning.
  5. Next, add Dijon mustard, Swiss cheese, and the ½ cup of reserved pasta water. Cook and continue tossing until the mixture has thickened into a sauce; approximately 1-2 minutes.
  6. Add in cooked spaghetti and toss until well incorporated. Toss in chopped parsley.
  7. Serve into 4 bowls. Spoon any remaining sauce over spaghetti noodles.

Ingredients
Strawberry Basil Puree
  • 1/4 cup basil
  • 1 cup strawberries
  • 1/2 cups water
Lemonade
  • 2 1/2 cup lemon juice
  • 7 1/2 cups water
  • 1/4 cup stevia sugar substitute

Strawberry Puree
  1. Wash the strawberries and basil until cold running water.
  2. Remove green stem from the strawberries and slice in half. Remove the basil leaves from the stem.
  3. Place the halved strawberries and basil leaves in a food processor and ½ cup of water. Blend until a smooth mixture.
  4. Pour into a small bowl and store in the refrigerator for at least an hour up to 3 days.
Lemonade
  1. Pour Basil Strawberry puree thru a mesh strainer over a bowl. Use a spoon to move the puree back and forth over the mesh strainer to drain the liquid.
  2. Pour the strained Basil Strawberry puree into a 2-quart pitcher
  3. Add lemon juice, 7 1/2 cups of water, and stevia and stir until mixed
  4. Place in the refrigerator to chill until serving or serve over ice.

Ingredients
Salad
  • 6 ounces baby spinach leaves fresh
  • 6 ounces baby spring mix fresh
  • 1/2 medium red onion sliced into bite size pieces
  • 1 cup sliced strawberries
  • 1 cup grapes
  • 11 ounces canned mandarin oranges drained
  • 1/2 cup Raspberry Vinaigrette recipe below
Candied Pecans - Optional
  • 1/2 cup brown sugar packed
  • 2 tablespoons orange juice
  • 1 cup pecan halves
Raspberry Vinaigrette
  • 3/4 cup olive oil
  • 2 teaspoons dijon mustard
  • 1/2 cup raspberry preserves
  • 1/4 teaspoon dried oregano
  • 1 cup red wine vinegar
  • 1/4 teaspoon ground black pepper
  • 1/2 cup white sugar
  • 1 teaspoon garlic salt
  • 1/2 cup raspberries
  • 1 teaspoon basil

Salad
  1. Wash and dry spinach leaves and spring mixed greens. In a large bowl layer 1/2 the spinach, greens, red onion, strawberries, grapes, and pecans and repeat to create the top layer. Finish salad by playing the oranges on top. Drizzle Dressing over top of salad before serving.
Candied Pecans
  1. Preheat oven to 350 degrees F. Combine brown sugar and orange juice. Add pecan halves, stirring to coat. Spread in a lightly greased cookie sheet. Bake for 12 minutes or until nuts are browned and syrup is bubbly, stirring once. Pour out onto a lightly greased baking sheet, separating into single nuts. Cool on a wire rack. *Addition of candied pecans will change nutrition information
Raspberry Vinaigrette
  1. In a blender, combine all ingredients and blend until well combined. Pour in a jar and refrigerate until chilled. *yields 6 - 1/2 cup servings.

Ingredients
  • 2 cups shelled edamame soybeans fresh or frozen, thawed
  • 1/4 teaspoon kosher salt
  • 1/2 cup yellow sweet corn fresh, canned or frozen, thawed
  • 1/4 teaspoon ground black pepper
  • 1/4 cup green onion chopped
  • 1 cup fresh tomatoes chopped
  • 1/2 teaspoon crushed garlic
  • 1/4 cup basil chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon red wine vinegar

  1. Preheat oven to 400 degrees F.
  2. Place edamame, corn, onion, garlic, olive oil, salt and pepper into a 13 x 9 pan and stir to combine. Place on middle rack of the oven and roast for 10 to 15 minutes, just until the edamame begins to brown.
  3. Remove from oven and place in refrigerator until completely cool, approximately 30 minutes.
  4. Add tomato, basil and vinegar to mixture and toss to combine. Taste; adjust seasoning as needed. Serve chilled or at room temperature.
