Corn Stuffed Pork Chops

If you are not a fan of pork chops, you can filet a chicken breast and use the same stuffing recipe. Enjoy!

Ingredients
  • 1/4 cup onion chopped
  • 1/4 cup green bell pepper chopped
  • 1 tsp olive oil
  • 3/4 cup corn kernels fresh or frozen, thaw if frozen
  • 1 cup chicken stuffing mix low sodium
  • 2 tbsp canned, diced pimentos
  • 1/8 tsp ground cumin
  • 1/8 tsp ground black pepper
  • 4 4 ounce extra lean pork chops

Instructions
  1. In a large skillet, sauté onion and green pepper in olive oil for 3-4 minutes or until tender.
  2. Stir in the stuffing mix, corn, pimientos, cumin, and pepper.
  3. Cut a pocket in each pork chop by making a horizontal slice almost to the bone; fill with stuffing.
  4. Secure with toothpicks if necessary.
  5. Place in a baking dish.
  6. Bake, uncovered, at 375 degrees for 35-40 minutes or until meat juices run clear and meat thermometer reads 160 degrees.
  7. Discard toothpicks before serving.

Ingredients
  • 1 1/2 lb extra lean ground beef
  • 1 large yellow onion chopped
  • 2 (15 ounce) cans Ranch style beans
  • 1 (15 ounce) can low sodium kidney beans
  • 1 (15 ounce) can low sodium kernel corn
  • 2 (15 ounce) cans low sodium stewed tomatoes
  • 1 (10 ounce) can diced tomatoes with green chilies
  • 1/2 ounce low sodium taco seasoning about 1/2 of one packet
  • 1/2 ounce dry ranch style dressing mix about 1/2 of one packet

Instructions
  1. Cook ground beef with chopped onion; drain grease.
  2. Add to large crock pot.
  3. Clean tops of all canned goods before opening
  4. Then add other ingredients (including liquid from vegetables) to the meat mixture in the crock pot.
  5. Stir well. Simmer in crock pot on low for 6-8 hours or on high for 4 hours.
