Ingredients
  • 1 large red bell pepper sliced into strips
  • 1.5 cup mushrooms sliced
  • 1 onion thickly sliced
  • 2 medium zucchini sliced
  • 1 medium summer squash
  • 1.5 pound chicken breast cut into equal size cubes
  • 3 tablespoons olive oil
  • 1 tablespoon oregano dried
  • 1 tablespoon parsley dried
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions
  1. Wash your hands and clean your preparation area. Heat your grill to cook over medium-high heat.
  2. Cut the vegetables as directed. Cut the chicken in to evenly sized cubes.
  3. Combine the olive oil, oregano, parsley, garlic powder, and paprika in a small bowl.
  4. Cut 6 sheets of foil approximately 12 inches in length each.
  5. Divide the vegetables and chicken evenly among the 6 sheets of foil. Top each with some of the oil mixture, spreading over the vegetables and chicken.
  6. Fold the foil so that it creates a sealed pocket.
  7. Grill the foil packets over medium high heat for 35 to 40 minutes, or until chicken reaches 165 degrees F.

Ingredients
  • 1 medium yellow squash
  • 1 medium zucchini
  • 1 large red onion thinly sliced
  • 4 tablespoons extra virgin olive oil divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh basil chopped
  • 2 cloves garlic minced
  • 12 ounces whole wheat pasta

Instructions
  1. Wash your hands and clean your preparation area.
  2. Cook the pasta according to package directions, minus added salt.
  3. Preheat oven to 450 degrees.
  4. Wash all vegetables and garlic before chopping.
  5. In a medium bowl, toss squash, zucchini, bell pepper and onion with half of oil (2 tablespoons) in a large roasting pan or a large baking sheet with sides.
  6. Season with salt and pepper.
  7. Place the vegetables in a preheated oven. Stir the vegetables every 5 minutes, until tender and browned for about 10 to 20 minutes.
  8. Meanwhile, combine basil, garlic and remaining oil (2 tablespoons) in a large bowl.
  9. Combine pasta, vegetables and dressing in a large bowl; serve warm.

Ingredients
  • 1/2 pound extra lean ground beef
  • 1/2 pound ground pork sausage
  • 1 medium onion chopped
  • pepper to taste
  • 1/2 teaspoon garlic powder
  • 6 ounces unsalted tomato paste
  • 2 cans diced tomatoes Italian style, 15.5 ounce
  • 4 cups sliced zucchini about 4 small
  • 1/4 cup grated or shredded Parmesan cheese

  1. In a skillet, brown beef, pork, and onion. Drain if needed.
  2. Add seasonings, tomato paste, and canned tomatoes.
  3. Simmer for 5 minutes. Stir in zucchini.
  4. Transfer mixture into a greased 9X13 baking dish.
  5. Bake at 350°F for 20 to 25 minutes or until bubbly.
  6. Remove from oven and sprinkle with grated parmesan.

Ingredients
  • 1 1/2 cup all-purpose flour or white whole wheat
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated white sugar
  • 1/4 cup light brown sugar packed
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cup shredded zucchini
  • 1 cup rolled oats
  • 1/2 cup chopped pecans or walnuts optional
  • 1/2 cup semi-sweet chocolate chips

  1. Preheat oven to 350 degrees. In a mixing bowl whisk together flour, cinnamon, baking soda and salt for 20 seconds, set aside.
  2. In the bowl of an electric stand mixer fitted with the paddle attachment whip together butter, granulated sugar and brown sugar until creamy.
  3. Mix in egg and vanilla extract. Add zucchini and with mixer set on low speed, slowly add in flour mixture. Stir in oats, walnuts and chocolate chips (I reserved 1/3 cup of the chocolate chips to press into the tops of dough balls before baking, just for looks which is totally optional).
  4. Shape dough into balls, 2 Tbsp each, then transfer to a Silpat or parchment paper lined baking sheets, spacing cookies 2-inches apart.
  5. Bake in preheated oven 11 - 14 minutes until edges are lightly golden. Cool on baking sheet 2 minutes then transfer to a wire rack to cool completely. Store in an airtight container.
