- Pearls must be soaked for hours before cooking
- Most commonly found in bubble tea
Starch:
- Also called tapioca flour
- Can be used as a thickening agent
- Dissolves quickly
- Substitute for cornstarch and arrowroot
- Gluten Free
- Commonly used in flat breads
