Ingredients
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 cups low-fat buttermilk room temperature
  • 1/4 cup honey
  • 2 1/2 tablespoons olive oil
  • 2 tablespoons ground flax seeds
  • 2 tablespoons slivered almonds
  • 2 tablespoons chia seeds

Instructions
  1. Preheat oven to 300 degrees Fahrenheit.
  2. Spray a 9” x 5” loaf pan with non-stick spray.
  3. In a large mixing bowl, whisk together whole wheat flour, all-purpose flour, flax seeds, baking soda and salt. Set it aside.
  4. In a medium bowl, whisk together buttermilk, honey, and oil.
  5. When oven is preheated, Combine the wet ingredients into the dry ingredients and mix only until combined with a wooden spoon. Do not overmix.
  6. Place batter into prepared loaf pan. Smooth the top of the batter.
  7. Sprinkle the slivered almonds and chia seeds on top, and gently push down into the dough to get them to stick.
  8. Bake for 55 minutes or until done.
  9. Remove from the oven and let cool on wire rack for about 10 minutes before removing bread from the pan. Cool completely before slicing. Slice less than one half inch to get 14 slices.

Ingredients
  • 4 4 oz tilapia filets
  • 1 cup bread crumbs
  • 2 tbsp Parmesan cheese grated
  • 2 tsp basil chopped
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1 egg
  • 1/4 cup low-fat buttermilk

  1. Preheat oven to 400 degrees
  2. Coat the inside of a 9x13 inch baking pan with nonstick spray
  3. In a shallow pan, mix the breadcrumbs, cheese, basil, salt and pepper; set aside.
  4. In another pan, combine the egg and buttermilk. Dip each fish fillet first in the milk mixture, then in the crumb mixture to coat both sides.
  5. Arrange the fillets in one layer in the baking pan. Bake for 15 to 20 minutes or until the fish flakes easily with a fork.
