Ingredients
  • 1/2 pound pork loin, lean cubed
  • 2 teaspoon olive oil
  • 1/2 cup orange marmalade sugar free
  • 1 Tablespoon chili sauce
  • 1 cup snow peas
  • 1 red bell pepper julienne
  • 1 medium onion sliced in rings

Instructions
  1. Clean your hands and your cooking area.
  2. Brown the pork loin in olive oil over medium-high heat. Set aside when cooked thoroughly.
  3. In the same skillet add in the orange marmalade, chili sauce, snow peas, red pepper, and onion rings. Saute until tender. Add the pork back into the dish and heat thoroughly until it reaches an internal temperature of 145 °F.

Ingredients
  • 2 cups uncooked instant brown rice
  • 1 pound boneless, skinless chicken breast
  • 2 teaspoons oilve oil
  • 1 cup chunky salsa
  • 1/4 cup orange marmalade
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground ginger
  • 2 tablespoons minced fresh cilantro

  1. Cook rice according to package directions. Cut chicken into 1-inch cubes.
  2. In a large nonstick skillet coated with cooking spray, cook chicken in oil over medium heat for 5 minutes or until pink.
  3. Stir in salsa, marmalade, lime juice, brown sugar and ginger. Bring to a boil. Reduce heat and simmer, uncovered, for 2 minutes. Sprinkle cilantro. Serve with rice.
