Ingredients
  • 2 pounds chicken breast skinless boneless, cubed
  • 1 medium yellow onion chopped
  • 4 cloves garlic chopped
  • 1 jalapeno sliced
  • 1/2 cup creamy peanut butter
  • 1/2 cup low sodium chicken broth
  • 2 Tablespoons soy sauce
  • 1 Tablespoon honey
  • 1/4 teaspoon crushed red pepper flakes
  • Juice of 1 lime
  • 1/4 cup cilantro chopped
  • 2 tablespoons peanuts chopped

Instructions
  1. In a slow cooker place the chicken, onion, garlic, and jalapeno.
  2. In a small bowl combine the peanut butter, chicken broth, soy sauce, honey, and red pepper flakes.
  3. Pour the peanut butter mixture over the chicken. Cook on high for 4-5 hours or on low for 7-8 hours.
  4. When ready to serve, stir in the lime juice, cilantro and peanuts. Serve with extra fresh chopped jalapenos for extra spice!

Ingredients
  • 1/2 Tablespoon butter salted
  • 3 Tablespoons olive oil
  • 1/2 Tablespoon Worcestershire sauce
  • 1/2 Tablespoon sugar
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon kosher salt
  • 2 cups corn cereal squares
  • 2 cups rice cereal squares
  • 1 cups oyster crackers
  • 1/2 cup peanuts unsalted
  • 1/2 cup bagel chips
  • 1 cup pretzels

Instructions
  1. Wash your hands and clean your counter tops. Preheat oven to 250*F (or pellet smoker to 225*F).
  2. Melt butter with olive oil in a small sauce pan. Add Worcestershire sauce, sugar, garlic powder, dried oregano, black pepper, parsley, and salt. Mix until well combined.
  3. Add corn cereal squares, rice cereal squares, oyster crackers, bagel chips, and pretzels to a large bowl.
  4. Add melted butter mixture to large bowl. Toss cereal mixture to coat.
  5. Pour snack mix across a foil-lined cookie sheet.
  6. Bake the snack mix for 1 hour, stirring every 15 minutes. (or 1 ½ hours in the pellet smoker, stirring every 15 minutes)
  7. Store in an airtight container.
