Cottage Cheese Cheesecake

This creamy cottage cheese cheesecake can be made with a few ingredients, a blender and some time (to bake)! Not only is does it taste delicious, but it also has over half the amountĀ of calories as regular cheesecake. Top it with your favorite fruit or jam and enjoy!

Ingredients
Cheesecake Crust
  • 3.5 ounces (100g) graham crackers
  • 1 cup oatmeal or rolled oats
  • 2 tablespoons unsalted butter
  • 2 tablespoons maple honey
  • 3 tablespoons water
Cottage Cheese Cream Filling
  • 1 3/4 cups 2% cottage cheese
  • 1/3 cup plain nonfat Greek yogurt
  • 2 whole eggs
  • 1/4 cup honey
  • 1/3 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons lemon juice

Cheesecake Crust
  1. Preheat oven to 320°F (160°C). Grease bottom and sides of a 9 inch (20 cm) springform mold with butter or line it with parchment paper.
  2. Place graham crackers, butter and maple syrup in a food processor or high speed blender and pulse until they become fine crumbs. The mixture should resemble wet sand.
  3. Transfer the mixture into the prepared springform mold, and gently press it down with your hands, a spoon, or the bottom of a glass.
  4. Bake the graham crackers crust for 15 minutes while preparing the cream.
Cottage Cheese Cream Filling
  1. After baking the crust, preheat the oven to 350°F (180°C).
  2. Add to a food processor or blender cottage cheese, Greek yogurt, maple syrup, eggs, cornstarch, vanilla extract and lemon juice. Process until smooth and creamy.
  3. Pour the cottage cheese mixture over the baked crust, then use a spatula or spoon to spread it evenly.
  4. Bake cottage cheese cheesecake for 40 to 45 minutes, or until it has set.
  5. Once the cheesecake is baked, let cool at room temperature first, then refrigerate for at least 8 hours before serving.
  6. *Serve with fresh fruit, jam, or your favorite sauce.

This Red, White, & Blue Berry Cheesecake Salad is the perfect summer dessert! Its chilled which makes it refreshing but its not so heavy that it weighs you down. This is perfect any summer day for a BBQ, after a pool day, or to make for your Independence Day party!

Ingredients
  • 8 ounces nonfat cream cheese softened
  • 7 Tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 16 ounces fat free frozen whipped topping thawed
  • 4 cups strawberries sliced
  • 3 cups blueberries
  • 1 cup hard pretzels chopped

  1. Wash your hands and your preparation area. Rinse strawberries and blueberries under cool running water before slicing or using.
  2. Using a stand mixer or hand mixer, beat the cream cheese, powdered sugar, and vanilla extract until fluffy.
  3. Carefully fold in the whipped topping.
  4. Carefully fold in the berries and pretzels.
  5. Store in refrigerator until ready to eat.
  6. Tip: It’s recommended that you fold in the berries and pretzels just before serving. Storage for too long may water down the cheesecake and make the pretzels soggy.

Ingredients
Crust
  • 1 cup graham cracker crumbs Plain
  • 2 Tablespoons butter Unsalted, Melted
Cheesecake
  • 8 ounces whipped topping Fat Free, Thawed
  • 8 ounces cream cheese Fat Free
  • 1 cup vanilla greek yogurt Nonfat
  • 1 ounce Cheesecake Instant Pudding Mix Fat Free, Sugar Free
  • 3/4 cup pumpkin puree
  • 1/2 teaspoon Pumpkin Pie Spice Blend
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions
  1. Clean and prep baking area.
  2. Add melted butter to graham cracker crumbs and mix until well combined.
  3. Transfer buttered graham cracker crumbs into a pie dish or Springform baking pan and press them tightly into the bottom of the pan. Place pan into the refrigerator for 10-15 minutes to chill.
  4. In a large bowl, add whipped topping, cream cheese, and Greek yogurt and mix until well-combined using a handheld mixer.
  5. Add the instant pudding mix to the bowl and mix until smooth. Add in pumpkin puree, pumpkin pie spice, cinnamon, and vanilla extract, and continue to mix until well-combined.
  6. Remove pie pan from refrigerator and place mixture on top of crust. Ensure the mixture is evenly distributed.
  7. Place pie in the refrigerator for 2 to 3 hours or freezer for 30 minutes to 1 hour.
  8. *Consistency of pie mixture will depend on time refrigerated or frozen*
  9. Serve and enjoy!

Ingredients
  • 1.5 cups graham cracker crumbs
  • 12 ounces nonfat cream cheese at room temperature
  • 1/4 cup + 2 tablespoons sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1/4 cup water
  • 1 teaspoon plain gelatin powder
  • 1.5 cups fresh or frozen cranberries
  • 1 tablespoon fresh rosemary finely chopped

  1. Wash your hands and clean your preparation area.
  2. Preheat your oven to 350 degrees F.
  3. Line a mini-muffin tin with paper liners. Evenly distribute the graham cracker crumbs in the bottoms of the lined mini-muffin tin.
  4. In a bowl combine the cream cheese, 2 tablespoons sugar, vanilla extract, and eggs until well combined and smooth. Evenly distribute the cream cheese mixture among the mini-muffins. Bake in the oven for 12 minutes.
  5. While the mini-muffin tin is in the oven, in a saucepan, begin to heat the cranberries, sugar, water and rosemary, continuously mashing and stirring. Once it has broken down, add in the gelatin. Remove from heat and continue stirring.
  6. Once the cream cheese mixture is done cooking, top with the cranberry mixture. Cover and chill until the bites have set. Store in the fridge.
  7. Enjoy!

Pumpkin pie layer
  • 15 oz pure pumpkin puree
  • 2 tbsp brown sugar
  • 1/4 cup unsweetened evaporated milk
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
Yogurt layer
  • 1 cup low fat vanilla Greek yogurt
Crumble Layer
  • 6 sheets graham crackers
  • 1 tbsp whole almonds for topping (optional)

Pumpkin Pie Layer
  1. Place all ingredients for Pumpkin Pie layer in a bowl, mix well.
Cheesecake Layer
  1. Measure out yogurt into a bowl.
Crumble Layer
  1. Place graham crackers in a plastic bag, crush until at desired texture.
Assembling the Parfaits
  1. Spoon a heaping tablespoon of pumpkin pie mixture into small 3 oz containers. Add a heaping tablespoon of yogurt, then top with a heaping tablespoon of crumble. Repeat adding a layer of pumpkin mixture, yogurt, and top with more crumble. Add whole almonds on top if desired. Store ingredients separately and assemble just before serving.
