Ingredients
  • 2 6 ounce cans low-sodium or no-salt-added tuna in water drained, flaked
  • 1 6 ounce package low-sodium stuffing mix for chicken
  • 1 cup reduced fat cheddar cheese shredded
  • 1 cup water
  • 1 carrot shredded
  • 1/3 cup reduced fat mayonnaise
  • 2 tablespoons sweet pickle relish

Instructions
  1. Mix all ingredients. Refrigerate for 10 minutes.
  2. Heat a large nonstick skillet sprayed with cooking spray on medium heat.
  3. Use ice-cream scoop to add 1/3 cup portions of tuna mixture, in batches, to skillet. Flatten into patties with back of spatula.
  4. Cook 6 minutes or until golden brown on both sides, carefully turning patties over after 3 minutes.

Ingredients
  • 6 hard cooked eggs peeled and chopped
  • 1/2 cup chopped celery
  • 1/2 cup sweet pickle relish
  • 1/4 reduced fat mayonnaise with olive oil
  • 16 slices whole wheat bread

  1. Wash your hands and clean your cooking area.
  2. In a medium bowl, combine all ingredients.
  3. Evenly divide and spread mixture onto slices of whole wheat bread.
  4. Top with remaining slices of bread and serve immediately or cover and chill.

Ingredients
  • 1 (15 ounce) can salmon boneless, skinless
  • 1/3 cup reduced fat mayonnaise can use canola or olive oil mayo
  • 2 tbsp chopped onion
  • 2 tsp fresh lemon juice
  • 3/4 cup shredded, reduced fat cheddar cheese
  • 4 English muffins multi or whole grain
  • 1/4 tsp pepper

  1. Drain salmon.
  2. Add onion, mayonnaise, lemon juice, and pepper to taste.
  3. Mix well. Add half of cheddar cheese to salmon mixture.
  4. Spread on English muffin halves and place on baking sheet.
  5. Top with remaining cheese. Broil in oven for 3-4 minutes.
