One of my absolute favorite Dinner Tonight recipes is chicken salad with a curry yogurt sauce. On warm spring days, I crave cold salads for lunch or dinner and this recipe never disappoints! The grapes add sweetness and the curry powder is savory. Curry powder is not a traditional ingredient used in chicken salad but I think you’ll be pleasantly surprised by the unique flavor. Curry powder can be found in the spice aisle at your local grocery store. Not only do I love the taste, but the nutritional value is great. Chicken salad from a restaurant or grocery store is generally high in saturated fat. This recipe cuts half the fat by using plain Greek Yogurt and olive oil based mayo. This salad is great to bring to social events, give to new moms or just enjoy on the patio during lunch. Enjoy!
- 1/2 cup red or green grapes halved if large
- 1 1/2 cup cups cooked chicken breast diced
- 1 celery stalk, chopped
- 2 1/2 Tablespoons fat free greek yogurt Plain flavor
- 2 Tablespoons olive oil based mayonnaise
- 1/8 teaspoon chili powder
- 1/8 teaspoon curry powder
- 1/8 teaspoon salt
- 1/4 teaspoon pepper
- 4 pita pockets whole-wheat
- 4 pieces leaf lettuce
- 1 Tablespoon sliced almonds
- Combine grapes, chicken breast, and celery in a large bowl. Set aside.
- In another bowl, combine yogurt, mayonnaise, chili powder, curry powder, salt and pepper.
- Mix yogurt sauce with chicken mixture and add almonds. Place 1/2 cup salad in each pita pocket with 1 piece leaf lettuce.
P.S. For a twist, try adding diced apples or rasins instead of grapes, shredded carrots and walnuts. Add just a pinch of nutmeg with the original spices.
