Roasted Cauliflower and Grapes

This unexpected combination of a fruit and a vegetable makes for a delicious side dish! The grapes in this dish are a great way to get antioxidants and fiber in your diet.

Ingredients
  • 2 pounds cauliflower florets
  • 1/2 pound red grapes halved
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh rosemary chopped
  • 1/4 cup olive oil
  • 1/3 cup pecans chopped

Instructions
  1. Cut cauliflower into florets and place in large bowl.
  2. Slice grapes and place them in the bowl with the cauliflower.
  3. Mince garlic and chop rosemary and add to bowl with the grapes and cauliflower.
  4. Pour olive oil over cauliflower mixture.
  5. Toss well. Spread cauliflower mixture onto a foil lined baking sheet and place in the oven at 425 degrees for 25 minutes. In the last 5 minutes of cooking, sprinkle chopped pecans across the sheet pan and continue to bake for remaining 5 minutes.

Ingredients
  • 8 slices whole grain bread
  • 1 Tablespoon dijon mustard
  • 4 slices swiss cheese
  • 8 oz thin sliced turkey breast low sodium
  • 1 large avocado sliced
  • 1 cup red grapes sliced in half
  • 4 sprays Olive Oil Cooking Spray

Instructions
  1. Place bread slices on a clean surface. Spread mustard evenly on 4 bread slices.
  2. Layer your sandwiches with 1-2 slices of turkey meat,1 slice swiss cheese, sliced avocado. Last, top with sliced grapes.
  3. Place the remaining 4 slices of bread on top of the sandwich.
  4. Heat a large skillet on medium-high heat. Spray with cooking spray and grill each side of the sandwich for 2-3 minutes.
  5. Remove from heat and enjoy.
