Ingredients
Cake:
  • 1 16.25 ounce box white cake mix
  • 1 ounce Pistachio Sugar-Free/Fat-Free Pudding
  • 6 ounce non-fat greek yogurt vanilla
  • 3 egg whites
  • 1 1/2 cups water
Frosting:
  • 8 ounce container fat free whipped topping thawed
  • 1 cup skim milk
  • 1 ounce Pistachio Sugar-Free/Fat-Free Pudding

Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Lightly spray a 9 X 11 baking pan with non-stick cooking spray.
  2. In a large bowl, use a mixer to combine cake mix, pudding, yogurt, egg whites and water. Mix together for 2-3 minutes until well blended.
  3. Pour batter into cake pan and bake for 35-40 minutes or until a toothpick inserted comes out clean.
  4. While baking, combine ingredients for frosting. Use a mixer to beat milk and pudding on medium speed. Let rest for a few minutes and fold in thawed whipped topping. Place in refrigerator until cake has cooled.
  5. Top cake with frosting. Serve or store in the refrigerator until ready to enjoy.

For a fun festive St. Patrick’s Day dessert, add some green food coloring to the batter or frosting, or both!

  1. Clean your cooking area and wash your hands.
  2. Preheat oven to 350 degrees. Spray a 9inch square baking pan with non-stick spray.
  3. Combine flour, sugar, cocoa powder, baking soda, and baking powder.

  6. Pour into pan and bake 25-30 minutes until cooked through.

Ingredients
  • Nonstick cooking spray
  • 1 18.5 ounce box yellow cake mix
  • 6 ounces nonfat vanilla yogurt
  • 1 cup water
  • 2 large eggs whites
  • 1 14 ounce can nonfat sweetend condensed milk
  • 1 cup light coconut milk (in the can or box)
  • 2 tablespoons of a 3 oz. package sugar-free instant pudding mix
  • 2 cups 1% Milk
  • 1 teaspoon coconut extract
  • 8 ounces nonfat whipped topping

  1. Wash your hands and clean your cooking area. Preheat oven to temperature called for on the box of cake mix. Spray a 9*13- inch baking dish with cooking spray.
  2. In a large bowl, combine the cake mix, yogurt, water, and egg whites. Mix with electric mixer until combined and then mix on medium for about 2 minutes. Pour into the baking dish and bake according to the cake mix directions for a 9*13- inch pan.
  3. Allow the cake to cool in the pan for 15-20 minutes, While the cake is cooling, pour the condensed milk and the coconut milk into a medium bowl. Whisk until combined.
  4. Once the cake has cooled, use the handle of a wooden spoon to make holes all over the top of the cake, extending down deep into the cake. Slowly pour milk mixture evenly on top of the cake, making sure it soaks into the holes.
  5. Add pudding mix, milk, and coconut extract to the bowl from the first milk mixture. Whisk until the pudding just starts to firm up. Pour and then spread the pudding on top of the cake, filling all the holes.
  6. Refrigerate the cake, uncovered, for about 4 hours, until completely cold. Spread the whipped topping on top. Serve now (good), or cover the cake and let sit overnight (better). Serve with cut up fresh fruit or a warm citrus compote if desired. Refrigerate leftovers.

Ingredients
Carrot Cake Bars
  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 cup carrot shredded
  • 3/4 cup walnuts chopped
  • 1/3 cup refrigerated egg product (or 3 egg whites)
  • 1/4 cup canola oil
  • 1/4 cup fat-free milk
  • 1 recipe Fluffy Cream Cheese See below
Fluffy Cream Cheese Frosting
  • 1/2 cup frozen light whipped topping thawed
  • 4 oz reduced-fat cream cheese softened
  • 1/2 cup low fat vanilla yogurt

  1. Preheat oven to 350 degrees F. Line a 9x9x2-inch baking pan with foil, extending foil over the edges of the pan. Lightly coat foil with nonstick cooking spray. Set aside.
  2. In a medium bowl, combine all-purpose flour, whole wheat flour, sugar, pumpkin pie spice, baking powder, and salt.
  3. Add shredded carrot, 1/2 cup of the nuts, the eggs, oil, and milk
  4. Stir just until combined. Spread mixture evenly in the prepared pan.
  5. Bake for 15 to 18 minutes or until a toothpick inserted near center comes out clean. Cool bars in pan on a wire rack.
  6. Using the edges of the foil, lift the uncut bars out of the pan.
  7. Spread top evenly with Fluffy Cream Cheese Frosting. Sprinkle with the remaining 1/4 cup nuts. Cut into 20 bars.
Fluffy Cream Cheese Frosting
  1. In a medium bowl, beat cream cheese with an electric mixer on medium speed until smooth.
  2. Beat in yogurt until smooth. Fold thawed whipped topping into cream cheese mixture.
