Ingredients
  • 3 cups old fashion rolled oats Dry
  • 1/4 cup olive oil
  • 4 Tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon divided
  • 1/2 cup walnuts chopped
  • 1/2 cup dried apples chopped
  • 1/2 cup pumpkin seeds hulled, salted, roasted (pepitas)
  • 1/2 cup cranberries sweetened, dried

Instructions
  1. Wash your hands and clean your area.
  2. Preheat your oven to 300◦F.
  3. In a large bowl, add your oats and evenly add the olive oil. Mix until evenly coated.
  4. Next, add the maple syrup, vanilla extract, ½ teaspoon of cinnamon, and walnuts. Mix until well combined and oats are evenly coated.
  5. Transfer oat mix to a baking sheet and spread evenly, allowing space on the baking sheet. Note: Overcrowding can cause oats not to bake as thoroughly.
  6. Bake oat mix for 25 to 30 minutes and stir halfway through. The oat mixture should be a light golden-brown color once it is done.
  7. Once the oats are done baking, allow them to cool for 5 to 10 minutes.
  8. When oat mix has cooled, add them to a mixing bowl, along with the dried apples, pumpkin seeds, and cranberries, and mix.
  9. Coat the granola mix with the remaining ¼ teaspoon of cinnamon and mix.
  10. Serve granola as a snack or store in an air-tight container.

Ingredients
  • 1/4 cup honey
  • 1/2 cup almond butter
  • 2 teaspoon vanilla extract
  • 2 cups oats
  • 2 cups crisp rice cereal
  • 3 cups nonfat vanilla greek yogurt
  • 3 cups raspberries rinsed

Instructions
  1. Clean your hands and your preparation area.
  2. In a microwave safe bowl, microwave ¼ cup honey and ½ cup almond butter for 15 seconds. Stir and return to microwave for another 15 seconds. Remove from microwave and stir. Use caution as honey and almond butter can get hot quickly.
  3. To honey/almond butter mixture, stir in 2 teaspoons of vanilla. Add in 2 cups rolled oats and 2 cups of crisp rice cereal and stir until coated. Set aside.
  4. Place 12 paper muffin liners in a 12 cup muffin tin.
  5. Divide oat mixture among 12 muffin cups and gently press. Refrigerate for 2 – 4 hours until firm. Remove granola cup from muffin tin and store in airtight container in the refrigerator for 3 – 4 days.
  6. When ready to serve, top each granola cup with ¼ cup nonfat vanilla Greek yogurt and ¼ cup berries.
