Ingredients
- 2 1/2 cups frozen shredded hash browns thawed, low sodium preferred
- 1/3 cup chopped onion
- 1 tbsp olive oil
- 1 1/4 cup fat free egg substitute
- 1/2 cup skim milk
- 1 tsp Italian blend herb seasoning
- 1/2 tsp ground black pepper
- 20 slices pepperoni prefer turkey or low fat
- 3/4 cup shredded Mexican cheese blend

- In a large skillet, cook potatoes and onion in butter until tender and lightly browned.
- Meanwhile, in a large bowl, beat eggs, milk, Italian seasoning, salt and pepper.
- Pour over potato mixture; stir to combine.
- Sprinkle with pepperoni.
- Cover and cook on medium-low heat for 10-12 minutes or until eggs are set.
- Remove from the heat.
- Sprinkle with cheese; cover and let stand for 2 minutes.
- Cut into wedges.

- 2/3 cup plain non fat or low fat yogurt
- 3/4 cup chopped fresh cilantro
- 2 tbsp fresh lime juice
- 1 tbsp fresh lime zest
- 2 tsp dijon mustard
- 1/4 tsp ground cayenne pepper
- 1/4 tsp ground black pepper
- 2 cups shredded cooked chicken
- 1 large, fresh mango peeled and cut into chunks
- 6 cups fresh spinach leaves washed

- In a small bowl, whisk yogurt, cilantro, lime juice, lime zest, Dijon mustard and spices to make a dressing.
- Mix chicken and mango in medium bowl.
- Add dressing to chicken and mix well. Serve 1/2 cup chicken salad on top of 1 cup of washed spinach leaves.

- 1 1/4 lb boneless, skinless chicken breast tenderloins
Cajun Seasoning
- 2 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp dried thyme leaves
- 1/2 tsp dried oregano leaves
- 1/2 tsp cayenne pepper
- 1/2 tsp ground black pepper
Servings: 4-6 ounces

- NOTE: Mix all dry ingredients; store in an airtight container until ready to use.
- Preheat oven to 350° F.
- Wrap pan in foil leaving enough foil to cover chicken
- Add chicken to a bowl and coat well with spice mix.
- Spray sheet pan with nonstick spray and add chicken, distributing it evenly on the sheet pan.
- Cover chicken with foil and bake 20-25 minutes until fully cooked or until it reaches an internal temperature of 165°F.

- 1/4 cup onion chopped
- 1/4 cup green bell pepper chopped
- 1 tsp olive oil
- 3/4 cup corn kernels fresh or frozen, thaw if frozen
- 1 cup chicken stuffing mix low sodium
- 2 tbsp canned, diced pimentos
- 1/8 tsp ground cumin
- 1/8 tsp ground black pepper
- 4 4 ounce extra lean pork chops

- In a large skillet, sauté onion and green pepper in olive oil for 3-4 minutes or until tender.
- Stir in the stuffing mix, corn, pimientos, cumin, and pepper.
- Cut a pocket in each pork chop by making a horizontal slice almost to the bone; fill with stuffing.
- Secure with toothpicks if necessary.
- Place in a baking dish.
- Bake, uncovered, at 375 degrees for 35-40 minutes or until meat juices run clear and meat thermometer reads 160 degrees.
- Discard toothpicks before serving.
