Ingredients
  • 3/4 pound lean ground beef
  • 1 cup medium red bell pepper thinly sliced
  • 1 cup medium green bell pepper thinly sliced
  • 1/2 cup medium yellow onion diced
  • 1 cup mushrooms diced
  • 1 Tablespoon minced garlic
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 3 cups frozen cauliflower rice
  • 4 ounces plain greek yogurt
  • 1/2 cup mozzarella cheese shredded

Instructions
  1. In a large, oven safe skillet over medium heat, add the bell peppers, onions, and garlic. Cook about 5 minutes and add the pre-cooked ground beef. Continue cooking until beef is warm and vegetables are tender.
  2. Reduce the heat to low, add the seasonings and stir to incorporate. Add cauliflower rice and plain Greek yogurt. Stir into the meat mixture until well incorporated.
  3. Top with shredded mozzarella, covering top of skillet mixture. Bake for 10-12 minutes or until cheese is melted.
  4. Carefully remove from oven, let sit 5-10 minutes. Garnish with fresh parsley, if desired, before serving.
  5. Note: If you don’t have an oven safe skillet, you can spread the mixture into a 9x13 casserole dish after step 3 (before adding the cheese).

Ingredients
  • 2 servings Homemade Pesto
  • 1/4 cup roasted red peppers
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion chopped
  • 1/2 cup Asparagus spears sliced on bias (about 4 spears)
  • 1/2 cup carrots sliced in rounds
  • 1/4 cup mozzarella cheese shredded, low sodium
  • 1 flatbread
  • 2 Tablespoons fresh basil for garnish

  1. Preheat oven to 425 degrees and rinse all fresh vegetables under cool running water before preparing.
  2. Prepare pesto according to recipe directions https://dinnertonight.tamu.edu/recipe/pesto/.
  3. Prepare all toppings - roasted red peppers, cherry tomatoes, red onion, asparagus, carrots, mozzarella cheese and garnish
  4. Lay flatbread on non stick baking sheet. Spread made pesto on flatbread leaving about ½ inch along the edge.
  5. Layer the vegetable toppings on top of pesto on flatbread. Sprinkle half of mozzarella and save the rest for topping after baking.
  6. Bake in the oven for 20 minutes until edges are brown and crispy and vegetables are softened but still have a little firmness to them.
  7. Remove flatbread from the oven and sprinkle the remaining mozzarella cheese and basil leaves for garnish. Enjoy!

Ingredients
  • 2 cups butternut squash cubed, steamed
  • 4 sundried tomato halves in olive oil drained
  • 2 cups spinach leaves frozen, thawed, and drained
  • 1 cup ricotta cheese low-fat
  • 1 Tablespoon Ranch Dip Mix
  • 3 Tablespoons water
  • 1 cup mozzarella cheese nonfat, shredded

  1. Wash your hands and clean your preparation area. Preheat oven to 375 degrees F.
  2. Add cooled steamed squash, sundried tomatoes, drained spinach leaves, ricotta cheese, ranch dip mix, and water into a blender. Combine until smooth.
  3. Pour the mixture into an oven-safe baking dish. Stir in ½ cup of mozzarella cheese into the dip.
  4. Sprinkle the remaining mozzarella cheese on top of the dip.
  5. Bake for 20-30 minutes until heated, and the cheese is browning on top.

  • 12 chicken nuggets
  • 12 dinner rolls 1 package
  • 1 cup Marinara Sauce
  • 1 1/2 cups mozzarella cheese shredded, nonfat
  • 1 Tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning salt free
  • 2 Tablespoons Parmesan cheese reduced fat
  • Non-stick Spray

Oven Instructions
  1. Clean your area and wash your hands before you begin.
  2. Cook chicken nuggets following package directions, set aside, and cool.
  3. Preheat the oven to 365 degrees F, and spray a 9X13 dish with cooking spray.
  4. Carefully slice the dinner rolls horizontally in half without separating the individual rolls.
  5. Place the bottom half of the rolls in the prepared dish and bake for 4-5 minutes until slightly toasted.
  6. Remove from the oven and assemble sliders. Place a chicken nugget on each outlined roll, top with marinara and mozzarella. Place the other sliced half of the rolls over the cheese.
  7. In a small bowl, mix olive oil, garlic powder, and Italian seasoning.
  8. Brush olive oil mixture over the top of the rolls and sprinkle with parmesan cheese.
  9. Cover with foil and bake for 20-25 minutes. Uncover and toast for an additional 5 minutes until golden brown.
Air Fryer Instructions
  1. Clean your area and wash your hands before you begin.
  2. Cook chicken nuggets following package directions, set aside, and cool.
  3. Set the air fryer to 350°F and preheat for 3 minutes.
  4. Separate dinner rolls into sizes that fit in the air fryer. Carefully slice the dinner rolls horizontally in half without separating the individual rolls.
  5. Place the bottom half of the rolls in the air fryer basket/tray and cook for 1-2 minutes or until lightly toasted. Repeat as needed.
  6. Remove the rolls from the air fryer and assemble the sliders. Place a chicken nugget on each outlined roll, top with marinara and mozzarella. Place the other sliced half of the rolls over the cheese.
  7. In a small bowl, mix olive oil, garlic powder, and Italian seasoning.
  8. Brush olive oil mixture over the top of the rolls and sprinkle with parmesan cheese.
  9. Set the air fryer to 350°F and preheat for 3-4 minutes.
  10. Cover sliders with foil. Add them to the air fryer basket/tray and cook for 10-15 minutes. Uncover and cook for an additional 5 minutes until golden brown. Repeat as needed.
  11. Remove the sliders from the air fryer and allow them to slightly cook. Once ready, serve and enjoy.

Ingredients
  • 1 1/2 cups chicken breast cooked and diced or shredded
  • 1 cup Broccoli Baby Florets
  • 1/2 cup sour cream nonfat
  • 1/2 Tablespoon Ranch Dip Mix
  • 1 cup mozzarella cheese shredded, nonfat
  • 1 Classic Pizza Crust refrigerated

  1. Preheat oven to 375 degrees F. Place parchment paper over a baking sheet.
  2. In a large bowl stir together chicken, broccoli, sour cream, and ranch dip mix.
  3. Add in shredded mozzarella cheese and fold together.
  4. Unroll refrigerated pizza crust on a large wooden cutting board. Stretch out horizontally to the size of a 9 X 13 casserole dish.
  5. Slice crust vertically into 5 even sections. Measure ½ cup of filling and place on one side of each section.
  6. Distribute filling and fold over the empty layer of crust over the filling. Press edges with fingers or the edge of a fork.
  7. Transfer pockets to a prepared baking sheet and bake in the oven for 25-30 minutes until golden brown.
  8. Let pockets cool slightly before serving.
Freezing for Later?
  1. Individually wrap pockets after cooled with freezer paper or parchment paper. Place in a plastic freezer bag before freezing for up to 2-3 months.
Reheating Frozen Pockets
  1. Microwave: Remove pockets from the freezer and individually warm in the microwave wrapped for 2-3 minutes until heated through to 165 degrees F. Toast on a heated griddle for added crunch!
  2. Oven: Remove from freezer and unwrap. Place on a prepared baking sheet and place inside a pre-heated oven for 350 degrees F for 20-30 minutes until heated through to 165 degrees F.
