Ingredients
Tacos
  • 6 corn tortillas
  • 1 pound catfish fillet
  • 2 tablespoon Cajun creole seasoning
Pico De Gallo
  • 1 cup cherry tomatoes diced small
  • 1/2 medium white onion diced small
  • 2 jalapenos seeded & diced small
  • 1/4 cup cilantro leaves chopped
  • Juice of 1 lime
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Avocado Crema
  • 1 avocado ripe
  • 1/4 cup nonfat greek yogurt plain
  • 2 garlic cloves paste
  • 1 tablespoon lime juice

Instructions
  1. Wash hands and clean preparation area. Rinse all fresh fruits and vegetables under cool running water before using.
  2. Preheat the oven to 375 degrees F. Season the catfish fillets with the Cajun creole seasoning and bake for 25 minutes or until fillets reach an internal temperature of 145 degrees F.
  3. While the catfish is baking, prepare the Pico de Gallo. Combine all of the finely diced vegetables (tomatoes, onion, jalapenos, cilantro) in a medium bowl. Mix in the lime juice, salt, and pepper. Place in the refrigerator until ready to serve to let flavors combine.
  4. After making the Pico de Gallo, make the avocado crema. In a bowl combine the avocado and Greek yogurt, mash, and mix until well combined. Make the garlic clove into a paste using either a Microplane or by mincing the clove then running your knife blade back and forth over the minced garlic (see our tips on garlic paste). Add in garlic paste and juice of 1 lime into avocado mixture and combine well.
  5. To Assemble: flake the catfish and arrange evenly among tortillas, evenly distribute the Pico de Gallo and Avocado crema among tacos. Top with additional cilantro if desired.

Whipped Fruit Dip
  • 1/2 cup nonfat greek yogurt plain
  • 1/8 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons Agave syrup

  1. Make sure to start with a clean surface and clean hands
  2. Begin by heating up your grill to 450 degrees
  3. Slice pineapple into 12 wedges
  4. Place pineapple on grill and grill on each side for 4 minutes (8 minutes total).
  5. While pineapple is grilling, start by whipping the nonfat Greek Yogurt for 30 seconds on low and then for 2 minutes on a high speed.
  6. Add heavy whipping cream. Again, mix on low speed for 30 seconds and increase speed to high setting for 2 minutes.
  7. Add vanilla and agave and whip on high for another 2 minutes or until peaks are fluffy.
  8. Use as dip for grilled pineapple or top pineapple with whipped mixture and enjoy!
  9. Whipped fruit dip can be refrigerated up to 4 days.

Ingredients
  • 1 cup sugar
  • ½ cup nonfat greek yogurt
  • 1 tablespoon vanilla extract
  • 2 eggs
  • ½ cup 2% milk
  • 2 cup whole wheat flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup brown sugar
  • 2 tablespoon butter
  • 1 tablespoon cinnamon
  • 1 cup coarsely chopped pecans

  1. Begin by mixing sugar, milk, yogurt, eggs, and vanilla together until well combined.
  2. In a separate bowl mix together flour, baking powder and salt until well combined.
  3. Slowly add dry mixture to the wet mixture and make sure it is well combined.
  4. Pour into a greased 9x13 inch pan.
  5. Combine brown sugar, cinnamon and pecans and melted butter.
  6. Sprinkle evenly on top of the unbaked batter.
  7. Bake in an oven at 350 degrees for 30 to 35 minutes.
