Remember, if you don’t have a popsicle mold, you can easily blend this together and place in a freezer safe container and create a fruit sorbet!

- 2 cups coconut water unsweetened
- 1 tsp honey
- 1 tsp lemon juice
- 1 cup frozen strawberries
- 1 cup frozen peaches
- 1 cup frozen pineapple
- 1 cup frozen mango
- Add coconut water to a pitcher, stir in honey and lemon juice. Stir until well combined.
- Let fruit thaw slightly before slicing. Slice thinly or dice small enough to fit into popsicle mold.
- Place fruit into popsicle mold, filling about Âľ full
- Pour the coconut water mixture over the fruit to fill mold completely.
- Add the lid to popsicle mold, freeze for one hour before adding the popsicle sticks.
- Continue freezing for 6-8 hours (or overnight).
- Tip: to remove popsicles from mold, you may need to soak mold in warm water for 30-60 seconds.
