Quesadillas with Mushrooms and Black Olives

This easy quesadilla with cheese, black olives, and mushrooms is such an easy fix for hungry kids or adults to satisfy those cravings, while still getting some veggies in!

Ingredients
  • 4 (8 inch) corn or low fat flour tortillas
  • 2/3 cup reduced fat cheddar cheese shredded
  • 1/4 cup mushrooms chopped
  • 1/4 cup (about 1 - 2.25 ounce can) black olives chopped
  • 2 tablespoons chopped green onions
Servings: (1/2 of a quesadilla)

Instructions
  1. Coat a large nonstick skillet cooking spray.
  2. Place over medium high heat.
  3. Place 1 tortilla in skillet and top with half of 1/3 of a cup with cheese.
  4. Layer the olives, mushrooms and green onions on top of the cheese.
  5. Top with remaining cheese and tortilla.
  6. Cook 2 minutes on each side or until lightly browned.
  7. Remove and keep warm.
  8. Repeat with remaining ingredients. Cut each into wedges and serve.

Ingredients
  • 1 pound extra lean ground beef 3% fat, 97% lean
  • 1/2 each sliced onion
  • 1/2 each chopped bell pepper
  • 2 cups cooked brown rice
  • 2 cups frozen corn thawed
  • 1 cup salsa
  • 1/2 cup reduced fat cheddar cheese shredded

  1. Wash your hands and clean your cooking area.
  2. Brown ground beef, onion, and bell pepper in skillet.
  3. Drain meat.
  4. Heat cooked rice, meat mixture, corn, and salsa in skillet for 10 to 15 minutes. (Add water as needed to prevent the rice from sticking).
  5. Add cheese and heat until cheese melts (about 5 minutes).

  • 1 (8 ounce) can tomato sauce unsalted
  • 2 cups water
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1 cup canned, low sodium pinto beans
  • 1/2 cup reduced fat cheddar cheese low sodium

  1. Wash your hands and clean your cooking area.
  2. In large skillet, brown the meat.
  3. Drain off any remaining fat.
  4. Add the onions and green peppers to the meat.
  5. Cook for 5 minutes on medium to low heat.
  6. Add remaining ingredients, except cheese.
  7. Cover and cook on low heat for 15 minutes, stirring occasionally.
  8. Add cheese and heat until melted.
  9. Serve immediately.
