Tailgate Dip
This is the perfect healthy dip to bring to your tailgate! This healthy twist on a classic layer dip is a great way to make sure you get some veggies in!
- 16 ounces fat free refried beans
- 2 cup nonfat sour cream
- 4 ounces pickled jalapenos chopped
- 2 avocados smashed
- 1 tablespoon lime juice
- 2 cups reduced fat, shredded cheddar cheese
- 3 tomatoes diced
- 1 cup sliced green onions
- 1 cup cilantro leaves chopped
- 4 ounces sliced black olives
- 4 ounces lowfat tortilla chips
- 6 celery stalks cut into 3rds or 4ths
- Wash your hands and clean your preparation area. Rinse the tomatoes, green onions, and cilantro leaves under cool running water before dicing or chopping.
- In a 9x13 inch baking dish, spread the refried beans evenly in the bottom.
- In a mixing bowl combine the sour cream, drained pickled jalapenos, smashed avocados, and lime juice and mix until well combined.
- Spread sour cream mixture on top of the beans.
- Top the sour cream mixture with the shredded cheddar cheese.
- In a bowl combine the tomatoes, green onions, cilantro, and black olives and mix until well combined. Sprinkle evenly over top of the cheese.
- Cover and chill in the refrigerator for at least 30 minutes. Serve with tortilla chips and celery stalks cut into 3rds or 4ths.
How to Sanitize your Kitchen after a Flood
Sanitizing your Kitchen & Utensils:
- Thoroughly wash metal pans, ceramic dishes, utensils
(including can openers) with soap and water (hot water if
available). Rinse and then sanitize them by boiling in clean
water or immersing them for 15 minutes in a solution of
1 tablespoon of unscented, liquid chlorine bleach per
gallon of drinking water. - Thoroughly wash counter tops with soap and water (hot
water if available). Rinse and then sanitize them by applying
a solution of 1 tablespoon of unscented, liquid chlorine
bleach per gallon of drinking water. Allow to air-dry. - Discard wooden cutting boards, plastic utensils, baby
bottle nipples, and pacifiers that may have come in contact
with flood waters. There is no way to safely clean them.
Salvaging All-Metal Cans & Retort Pouches
Undamaged, commercially prepared food in all-metal cans
and retort pouches (for example, flexible, shelf-stable juice or
seafood pouches) can be saved if you do the following:
- Remove the labels if possible. They can harbor dirt and
bacteria. - Thoroughly wash the cans or retort pouches with soap and
water (use hot water if available). - Brush or wipe away any dirt or silt.
- Rinse the cans or retort pouches with water that is safe for
drinking (if available). Dirt or residual soap will reduce the
effectiveness of chlorine sanitation. - Then sanitize them by immersion in one of the following
ways:- Place in water. Allow the water to come to a boil for
2 minutes.
or - Place in a freshly made solution consisting of 1 tablespoon
of unscented, liquid chlorine bleach per gallon of
drinking water (or the cleanest, clearest water available)
for 15 minutes.
- Place in water. Allow the water to come to a boil for
- ย Allow to air-dry for a minimum of 1 hour before opening
or storing. - Relabel the cans or retort pouches with a marker. Include
the expiration date if available. - Use the food in these reconditioned cans and retort pouches
as soon as possible. - Any concentrated baby formula in reconditioned, all-metal
containers must be diluted with clean, drinking water.

Yogurt and Granola Cups

- 1/4 cup honey
- 1/2 cup almond butter
- 2 teaspoon vanilla extract
- 2 cups oats
- 2 cups crisp rice cereal
- 3 cups nonfat vanilla greek yogurt
- 3 cups raspberries rinsed
- Clean your hands and your preparation area.
- In a microwave safe bowl, microwave ยผ cup honey and ยฝ cup almond butter for 15 seconds. Stir and return to microwave for another 15 seconds. Remove from microwave and stir. Use caution as honey and almond butter can get hot quickly.
- To honey/almond butter mixture, stir in 2 teaspoons of vanilla. Add in 2 cups rolled oats and 2 cups of crisp rice cereal and stir until coated. Set aside.
- Place 12 paper muffin liners in a 12 cup muffin tin.
- Divide oat mixture among 12 muffin cups and gently press. Refrigerate for 2 โ 4 hours until firm. Remove granola cup from muffin tin and store in airtight container in the refrigerator for 3 โ 4 days.
- When ready to serve, top each granola cup with ยผ cup nonfat vanilla Greek yogurt and ยผ cup berries.
Tortilla Layer Sandwich
Surprise your kids with a fun sandwich in their lunchbox that will be sure to make them smile! Use our Tortilla Layer Sandwich recipe plus their favorite cookie cutter to add some fun to their day!
- 3 8 inch flour tortilla
- 2 tablespoons fat free crem cheese
- 1/2 cup fresh spinach chopped
- 2 ounces ham or turkey low sodium
- Spread low fat cream cheese on one side of tortilla. Top with fresh spinach and ham. Repeat layer. Create fun sandwiches using a cookie cutter design.
