- 1 pound lean ground beef
- 1 cup onion chopped
- 1 cup green bell pepper chopped
- 1 tablespoon garlic minced
- 14 ounce can no salt added corn rinsed and drained
- 14 ounce can low sodium black beans rinsed and drained
- 10 ounce can no salt added diced tomatoes with green chilies
- 8.8 ounce bag microwaveable brown rice
- 1 ounce 40% less sodium taco seasonings
- 1 cup lowfat cheddar cheese shredded
- In a large skillet add the ground beef, onion, bell pepper and garlic. Cook until the ground beef has reached 150 degrees Fahrenheit
- Add the corn, black beans, diced tomatoes with green chilies, brown rice and taco seasoning. Mix until combined
- Heat on medium low heat for 10 to 15 minutes or until dish is thoroughly heated
