Tex Mex Beef Skillet

- 1 pounds 96% lean ground beef
- 1 medium onion chopped
- 2 tablespoons chili powder
- 2 tablespoons unsalted tomato paste
- 1 tablespoons ground cumin
- 1/8 teaspoons salt
- 3 cups cooked brown rice
- 16 ounce canned unsalted pinto beans rinsed and drained
- 8 ounce canned diced green chilies
- 14 ounce canned unsalted diced tomatoes un-drained
- 1/4 cup fresh cilantro for garnish
- Clean your area and wash your hands before you begin.
- In a large skillet over medium-high heat, cook meat and onion until brown, stirring to crumble. Drain, if necessary.
- Return meat to skillet.
- Add chili powder, cumin, tomato paste and salt. Mix until well combined.
- Stir in rice, beans, chilies and tomatoes; heat through. Cook until all the flavors combine.
- Garnish with cilantro.
- Serve immediately
Smokey Pork Tenderloin Tacos
Any day is a taco day!! These Smokey Pork Tenderloin Tacos are a special treat for a weekend meal. You can even double up the recipe and prep your meals for the week to come. Don’t forget to add the fresh salsa verde and a squeeze of lime for extra flavor.
- 1 tbsp chili powder
- 1 tbsp sugar
- 1/2 tbsp paprika
- 1/2 tbsp white pepper
- 1 tsp black pepper
- 1 pork tenderloin about 2-3 lbs
- 8 corn tortillas
- 2 avocados pitted and thinly sliced
- 1/2 cup salsa
- 8 sprigs cilantro finely chopped, about 2 tbsp
- Preheat oven to 325°F degrees.
- Pat tenderloin dry with paper towel.
- Put meat into bowl, rolling it in the Rub mixture until it is coated evenly.
- Cover the meat with wax paper or plastic wrap and let sit at room temperature for 10 minutes, no longer
- Place the meat in heavy duty aluminum foil and fold foil to make a sealed pouch.
- Place tenderloin in baking dish or pan and put into oven.
- Bake for 2 hours or until it shreds with a fork.
- Transfer meat to a serving dish and let rest for 5 minutes.
- Warm the tortillas by loosely wrapping them in a damp paper towel and microwave on high for 30 to 45 seconds.
- Shred with fork or slice tenderloin into very thin pieces and serve hot with warm tortillas, avocados, salsa, and cilantro in separate bowls so all family members can make their own tacos
Beef and Cheese French Bread
Beef and Cheese French Bread is a comforting, easy meal everyone will enjoy! This is a creative way to use ground beef and make it stretch a long way!
- 3/4 lb lean chuck or round ground beef
- 1/2 cup chopped onion
- 1/2 cup diced tomatoes unsalted
- 1 medium green bell pepper chopped
- 1 (2 1/4 ounce) can sliced ripe olives drained
- 1 tsp chili powder
- 1 tsp minced garlic
- 1/2 tsp ground cumin
- 1 (1 pound) loaf French bread unsliced
- 1 cup low fat sharp cheddar cheese shredded
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Drain. Stir in tomatoes, green pepper, olives, salt, chili powder, garlic and cumin. Remove from heat.
- Cut bread in half lengthwise.
- Place on baking sheet.
- Spread meat mixture over cut slices.
- Sprinkle with cheese.
- Bake at 450°F for 10-15 minutes or until cheese is melted.
- Cook’s note: This recipe serves 8 so you may have enough for lunch the next day. To reheat, wrap in foil and heat in a 350° F oven for 10-15 minutes or until hot. This results in French bread that is soft. If you prefer crispy bread, place the loaf on a baking sheet and bake 10-15 minutes or until hot.

- 1 Tablespoon water
- 1 egg white large
- 2 Tablespoons honey
- 2 1/4 cups unsalted mixed nuts
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- 1 teaspoon cumin ground
- 1 teaspoon coriander ground
- 1/2 teaspoon chili powder
- Preheat oven to 300 degrees Fahrenheit.
- Whisk water, egg white, honey in a large bowl. Add nuts and toss well to coat. Add the next 5 ingredeints and make sure the nuts are coated evenly.
- Spread nuts on a 9X13 inch baking pan and bake for 15-25 minutes.
