Ingredients
  • 1 cup cucumber seeded and chopped
  • 1 green pepper seeded and chopped
  • 1 cup celery chopped
  • 1 cup Tomato seeded and chopped
  • 4 green onions chopped
  • 3 teaspoon fresh dill minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/3 cup fat-free sour cream
  • 1/4 cup olive oil type mayonnaise
  • 1/2 of an avocado

Instructions
  1. In a large bowl, combine vegetables.
  2. Chill for at least an hour or longer to allow juices to accumulate.
  3. Drain well.
  4. In a small bowl, combine fresh dill, seasonings, sour cream, and mayonnaise.
  5. Fold dressing mixture into the vegetables.
  6. Cover and chill until ready to serve.

  • 1/3 cup chopped fresh cilantro
  • 2/3 cup fat-free sour cream
  • 1 tablespoon minced chipotle chile canned in adobo sauce
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder
  • 5 teaspoons fresh lime juice
  • 1/4 teaspoon salt
Salad
  • 4 cups shredded romaine lettuce
  • 2 cups roasted boneless, skinless chicken breast chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup diced peeled avacado
  • 1/3 cup thinly vertically sliced red onion
  • 1 (15- ounce) can low sodium black beans, rinsed and drained
  • 1 (8 3/4-ouce) can no-salt-added whole-kernel corn, rinsed and drained

  1. To prepare dressing, combine first 7 ingredients, stirring well.
  2. To prepare salad, combine lettuce and remaining ingredients.
  3. Drizzle dressing over salad; toss gently to coat. Serve immediately.

Ingredients
  • 4 3 ounce pork chops
  • 8 ounces fat-free sour cream
  • 3 cups crushed corn flakes

Instructions
  1. Coat both sides of pork chops with sour cream.
  2. Place pork chops in plastic bag with crushed corn flakes and shake to coat completely.
  3. Arrange pork chops in pan and bake for about 30 minutes depending on thickness of pork chops.
  4. Serve garnished with sprigs of parsley or rosemary.
