Ingredients
  • 1/2 de taza de yogur natural bajo en grasa
  • 3/4 de taza de cilantro fresco picado
  • 2 cucharadas de juego de limones frescos
  • 1 cucharada de cascara fresca de limon
  • 2 cucharaditas de mostaza Dijon
  • 1/4 de cucharaditas de chile de Cayena seco
  • 1/4 de cucharadita de pimienta negra molida
  • 2 tazas de pollo cocida desmenuzado y sin piel
  • 1 mango grande fresco en cubitos
  • 6 tazas de hojas de espinacas frescas

  1. Lavase las manos y limpie su area para cocinar.
  2. En un talon pequeño, bata el yogur, el cilantro, el jugo de limones, la cascara de limon, la mostaza Dijon y las especias para hacer un aderezo.
  3. Mezcle el pollo y el mango en un tazón mediano.
  4. Agregue el aderezo a la ensalada de pollo y revuelva bien. Sirva 1/2 taza de ensalada de pollo sobre 1 taza de hojas de espinaca lavadas

  • 1/2 cup red grapes halved if large
  • 1 1/2 cups cooked chicken breast skinless, diced
  • 1 celery stalk, chopped
  • 2 1/2 tablespoons plain nonfat Greek yogurt
  • 2 tablespoons reduced fat mayonnaise with olive oil
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon curry powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 each 100% whole wheat pita pockets cut in half
  • 4 pieces leaf lettuce
  • 1 tablespoon sliced almonds

  1. Clean your area and wash your hands before you begin.
  2. Combine grapes, chicken breast, celery in a large bowl. Set aside.
  3. In another bowl, combine yogurt, mayonnaise, chili powder, curry powder salt and pepper.
  4. Mix yogurt sauce with chicken mixture and add almonds. Place 1/2 cup salad in each pita pocket with 1 piece leaf lettuce.

  • 1 tablespoon minced chipotle chile canned in adobo sauce
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder
  • 5 teaspoons fresh lime juice
  • 1/4 teaspoon salt

  • 4 cups shredded romaine lettuce
  • 2 cups roasted boneless, skinless chicken breast chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup diced peeled avocado
  • 1/3 cup thinly vertically sliced red onion
  • 1 (15- ounce) can low sodium black beans, rinsed and drained
  • 1 (8 3/4-ouce) can no-salt-added whole-kernel corn, rinsed and drained

  • 1 cup chopped, cooked chicken breast
  • 1 cup canned mandarin orange segments drained and cut into pieces
  • 1/2 cup dried cranberries
  • 1/2 cup almond slices
  • 1/2 cup peeled jicama chopped

  1. Wash your hands well with soap and water.
  2. In a large mixing bowl, mix the chicken, orange pieces, cranberries, almonds, and jicama.
  3. Add the salad dressing and toss to coat.
  4. Cover the bowl with foil or plastic wrap.
  5. Refrigerate it for at least 1 hour or overnight.
  6. To serve, place a lettuce leaf on each plate.
  7. Place 1 cup of chicken salad on top of each lettuce leaf.
