Ingredients
  • 15 ounces canned cannellini beans, no salt added rinsed and drained
  • 10 ounces canned solid white tuna, packed in water drained and broken into chunks
  • 1/4 cup red onion chopped
  • 1/4 cup green olives pitted and chopped
  • 1 Tablespoon dry mustard powder
  • 4 Tablespoons red wine vinegar
  • 2 Tablespoon lemon juice
  • 4 Tablespoons olive oil
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 15 ounces canned beets, no salt added rinsed, drained, and chopped into bite size pieces
  • 8 cups spring mix lettuce

Instructions
  1. Combine beans, tuna, red onion, and green olives in a large bowl.
  2. Whisk together mustard powder, red wine vinegar, lemon juice, olive oil, dill, parsley, salt, pepper, garlic powder, and onion powder in a small bowl.
  3. Add half of the vinaigrette to tuna mixture, mix thoroughly.
  4. Combine spring mix salad and beets in a large bowl.
  5. Add remaining vinaigrette to the salad mixture and toss gently to coat.
  6. To serve, divide the salad and beet mixture evenly on to four plates and top with ¼ of the tuna mixture.

Ingredients
  • 3 5 ounce cans Chunk Light Tuna canned in water, unsalted, drained
  • 1/4 cup carrots shredded
  • 1/4 cup cucumber chopped
  • 1/4 cup red onion chopped
  • 1/4 cup Tomato chopped
  • 2 Tablespoons jalapeno chopped
  • 2 Tablespoons cilantro chopped
  • 4 Tablespoons lime juice about 2 limes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium cucumber sliced evenly into 20 slices
Servings: servings (1/2 cup ceviche + 5 cucumber slices)

Instructions
  1. Slice Cucumber evenly into 20 slices. Set aside.
  2. To a large bowl, add tuna, carrots, chopped cucumber, red onion, tomato, jalapeno, and cilantro. Stir to combine evenly.
  3. In a small bowl, add lime juice, salt, and pepper. Stir to combine.
  4. Pour lime juice mixture over tuna mixture and stir to combine.
  5. Evenly divide the tuna ceviche on the sliced cucumbers.
  6. Serve and portion of 5 bites and enjoy!

Did you know that there are many different varieties of tuna? Read below for more information on some of the species of tuna that is more commonly consumed.

  • Albacore
    • Light flesh and mild flavor
    • Canned as “white meat tuna”
  • Bluefin
    • Dark red flesh and fattiest of any tuna
    • Best option for fresh tuna and is used almost exclusively in sashimi and sushi dishes
  • SkipJack
    • Strong flavor
    • Canned as chunk light tuna
  • Yellowfin (Ahi)
    • Light pink with mild flavor
    • Comparable to bluefin tuna and is often marketed as frozen tuna steaks of fresh loins or steaks.

Ingredients
  

  • 1 (9 ounce) package whole wheat elbow pasta
  • 1 (12 ounce) can chunk light tuna in water drained
  • 1 small red onion chopped
  • 1/2 cup prepared Greek vinaigrette salad dressing
  • 1/4 cup pitted black olives
  • 2 tablespoons reduced fat feta cheese crumbles
  • 1 boiled egg white
  • 1 medium celery stalk, chopped

Instructions
 

  • Cook the pasta according to the package directions. Drain pasta and place in refrigerator to cool.
  • Mix tuna, onion, salad dressing, feta cheese, celery, egg white, olives, and cooled pasta in a large bowl.
  • Serve cold over a bed of Romaine lettuce

Ingredients
  • 1 12 ounce can light tuna packed in water, drained
  • 1/2 cup reduced fat cheddar cheese shredded
  • 1 stalk celery chopped
  • 1 Tablespoon dehydrated minced onion
  • 1/4 teaspoon pepper
  • 1/4 cup reduced fat mayonnaise with olive oil
  • 1/2 Tablespoon lemon juice fresh
  • 8 slices 100% whole grain bread
Servings: 1 sandwich servings

Instructions
  1. Preheat oven to 350˚ F. Drain tuna and break the meat apart with a fork.
  2. Mix tuna, cheese, celery, light mayonnaise, onion, salt, and pepper in a medium mixing bowl.
  3. Spread the tuna mixture on 4 of the pieces of whole wheat bread and place a single slice of bread on top of each.
  4. Put each sandwich either on a cookie sheet or on a square of aluminum foil, wrapping the foil around the sandwiches and folding edges securely.
  5. Bake for about 20 minutes or until hot in the middle. Cool slightly before serving. Use the broiler to toast the bread if desired.
