- Spread Almond butter on one slice of bread followed by jelly. Top with second slice of bread. Slice into small squares and thread onto toothpicks or skewers, alternating with fresh fruit.

- 1 8 ounce tube refrigerated reduced calorie crescent rolls
- 1/2 cup low sodium Swiss cheese grated
- 1/2 cup low sodium ham chopped
- 1/2 cup low sodium ham chopped

- Preheat oven to 375 degrees.
- Lightly flour cutting board and gently roll out crescent rolls. Press into a 12 x 8 rectangle; press seams together.
- Spread cheese over crescent rolls, followed by ham.
- Roll up crescent roll and cut pinwheel slices. Place on greased cooking sheet and bake for 10-12 minutes or until golden brown.
Kiwi Mandarin Salad
A delicious and refreshing salad featuring the kiwi fruit and a homemade poppy seed dressing!
Ingredients
- 6 cups fresh baby spinach
- 4 Kiwi fruit peeled, cubed
- 1 cup mandarin oranges canned in juice, drained
- 1 cup pecans chopped
- 2 tablespoon nonfat vanilla, Greek yogurt
- 2 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 tablespoon honey
- 1 teaspoon Poppy seeds

- Wash your hands and clean your preparation area.
- Wash kiwi fruit with a soft bristle brush and rinse and dry spinach in a colander.
- Place spinach in a large serving bowl. Add kiwis, mandarin oranges, and pecans evenly on top of spinach.
- In a bowl or jar with a lid add the yogurt, lemon juice, olive oil, honey and poppy seeds.
- Whisk or shake dressing mixture until well combined.
- Pour over the spinach and fruit.
- Serve immediately.
Watermelon Salad

Vinaigrette Dressing
- 2 tablespoons agave
- 1 lime juice fresh squeezed
- 1 tablespoon extra virgin olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 4 cups seedless watermelon diced
- 4 cups fresh spinach
- 1 1/2 cup cucumber diced
- 1/4 cup fresh mint leaves torn
- 1/3 cup fresh basil leaves torn
- 1/3 cup reduced fat feta cheese crumbles
