Needing to revamp the leftover chicken from the other night. Look no further than creating a simple and easy BBQ Chicken Slider. With five ingredients, this makes for a simple lunch option that helps use up leftovers.

Ingredients
  • 8 ounce (1 ½ cups) shredded or pulled cooked chicken breast
  • 1/4 cup diced red onion
  • 1/4 cup light BBQ sauce
  • 1/4 cup water
  • 8 in whole wheat rolls sliced in half
Servings: 2 slider servings

Instructions
  1. Combine chicken, onion, BBQ sauce, and water in a small saucepan over medium heat.
  2. Simmer until the temperature of the chicken mixture reaches 165°F
  3. Divide the BBQ Chicken evenly between the rolls halves and serve

Dry Ice

Keep Your Cooler ColdDry ice keeps refrigerated and frozen items cooler longer. Whether you’re packing for a weekend camping trip, a week at the beach, a summertime picnic, and emergencies such as power outages, dry ice can enhance the way you pack your cooler.  Follow these steps when packing to keep your cooler cold.

 

-When keeping foods COOL place dry ice in the bottom of the cooler.  Cover dry ice with an insulating material such as newspaper or cardboard, then place food or cans on top.

-When keeping foods FROZEN place dry ice on top of items with an insulating material in between.  Do not allow direct contact, freezer burn damage may result.

-Avoid direct contact with skin by using gloves, tongs or a towel.  Dry ice can irritate skin if contact is made for more than 10 seconds.

-A standard cooler with 5-7 pounds of dry ice will last 18-24 hrs.

-When disposing of dry ice, allow adequate ventilation.  Dry ice naturally evaporates into carbon dioxide. Place outdoors in a paper bag for evaporation to occur, it will disappear in a short time.  Keep children and pets out of contact.

Ingredients
  • 1 Pound Ground Beef lean
  • 1/4 cup Barbecue sauce
  • 1/2 cup red onion finely chopped
  • 1 teaspoon garlic cloves finely chopped
  • 1/2 teaspoon chili powder
  • 2 tablespoons Chile Peppers in Adobo Sauce
  • 9 Mixed Grain Hamburger Buns slider size
  • 1 1/2 cups lettuce chopped
  • 1 Tomato sliced
  • 1/4 cup Pickles sliced

Grilling Instructions
  1. Wash your hands and clean your preparation area. Heat your grill to grill over medium-high heat.
  2. Chop red onion and garlic cloves. Measure ingredients.
  3. Add ground beef, barbecue sauce, red onion, garlic cloves, chili powder, and chile peppers in adobo sauce to a bowl. Mix ingredients.
  4. Form hamburger mixture in to slider sized patties – about 2 inches in diameter.
  5. Grill the hamburger patties over medium high heat for about 8 minutes on each side or until slider patties reach 165*F.
  6. Build cowboy sliders on multi grain hamburger buns with lettuce, tomatoes and pickles.
Air Fryer Instructions
  1. Complete instructions 2-4 in "Grilling Instructions."
  2. Preheat the air fryer to 375°F and set the time for 7 minutes.
  3. Once preheated, place food on the tray/basket making sure not crowd the sliders.
  4. Close the air fryer and start the cooking. Halfway through, turn the sliders over.
  5. Once done, make sure the sliders have reached 155°F internal temperature and enjoy!
  6. Note: Depending on the size of your air fryer, you might have to cook in batches.

Ingredients
  • 1 each green, red and yellow bell pepper cut into strips
  • 1 small onion cut into strips
  • 1 pound boneless beef top round steak fat trimmed and cut into strips
  • 1 garlic clove minced
  • 1/2 teaspoon black pepper
  • 3 Tablespoons light soy sauce less sodium
  • 1/2 cup low-sodium barbecue sauce
  • 2 cups hot cooked long-grain brown rice

  1. Heat large non-stick skillet with cooking spray on medium-heat.
  2. Add bell peppers and onions; cook and stir 6-8 minutes; transfer to large bowl and cover to keep warm.
  3. Add meat, garlic and black pepper to skillet.
  4. Cook and stir 3 minutes.
  5. Add soy sauce; cook 1 minute or until meat is done.
  6. Stir in barbecue sauce and cook another 3 minutes.
  7. Toss meat mixture with vegetables.
  8. Spoon over rice.

Ingredients
  • 3 tbsp reduced sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 1 clove garlic minced
  • 1 tsp granulated white sugar
  • 1/2 tsp ground black pepper
  • 3/4 lb lean beef top sirloin thinly sliced
  • 1 carrot chopped
  • 1 green onion chopped
  • 1/2 yellow onion chopped

  1. In a large re-sealable plastic bag, combine soy sauce, sesame oil, sesame seeds, garlic, sugar, and black pepper.
  2. Place beef, carrots, and onions in the bag; seal, and shake to coat the vegetables and beef with the sauce.
  3. Refrigerate for at least 2 1/2 hours.
  4. Preheat an outdoor grill or stove top on high heat.
  5. Remove meat and vegetables from marinade and place in a large skillet.
  6. Place a few tablespoons of the marinade in the skillet with the meat and vegetables.
  7. Cook for 15 to 20 minutes, or to desired doneness for meat.
