Italian Artichoke Chicken

Savor the flavorful Italian Artichoke Chicken and that home-cooked feel! Easy to prepare and large enough for leftovers, I am happy to share one of my family favorites for a Sunday dinner. Serve with pasta or over spinach and customize your meal!

Ingredients
  • 6 4 ounce chicken breast skinless and boneless
  • 1 Tablespoon Italian seasoning
  • 5-6 Roma tomatoes cored and chopped
  • 2 garlic cloves thinly sliced
  • 1 14 ounce can quartered Artichoke Hearts drained
  • 3 Tablespoon olive oil
  • 1 teaspoon sugar
  • 3 Tablespoon flour
  • 1/2 cup mozzarella cheese
  • fresh basil

Instructions
  1. Preheat oven to 350F degrees. Arrange raw chicken breasts in a 9X11 casserole dish. Season with Italian seasoning, set aside.
  2. In a large bowl mix together, tomatoes, garlic and drained artichoke hearts. Add extra virgin olive oil, sugar, and flour. Mix well.
  3. Pour the tomato and artichoke mixture over the chicken. Cover with foil and place in preheated oven, bake for 35-40 minutes.
  4. Remove from oven and uncover. Sprinkle mozzarella cheese over the top and place the chicken under the broiler for a few minutes until the cheese is golden brown and the vegetables are caramelized.
  5. Remove from oven and top with chopped basil over the hot dish.
  6. *Serve over your favorite pasta or pair chicken with a fresh spinach salad….or do both!

Ingredients
  • 4 cups bok choy chopped
  • 1/2 cup green onions chopped
  • 6 ounces dry Chow Mein noodles
  • 1/4 cup olive oil
  • 1/4 cup Vinegar
  • 1/4 cup sugar
  • 2 tablespoons low sodium soy sauce

  1. Wash and chop bok choy and green onions.
  2. Add to large mixing bowl.
  3. Break up chow Mein noodles and add to mixing bowl.
  4. Add olive oil, vinegar, sugar, and low sodium soy sauce to jar and close lid.
  5. Shake well to combine.
  6. Drizzle dressing over contents of mixing bowl.
  7. Gently toss and serve

Summertime was made for fun in the sun and the occasional sweet after an evening meal. You don’t have to discourage desserts at the dinner table when it comes to this low-fat dessert: Strawberry Banana Shortcake.

Ingredients
Angel Food Cake
  • 1 1/2 cup egg whites about 12 eggs
  • 1 teaspoon cream of tartar
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup flour
Strawberry Banana Topping
  • 1 pound lb. strawberries sliced
  • 3 bananas sliced
  • 1 tablespoon lemon juice
  • 4 ounces light whipped cream

Angel Food Cake
  1. Preheat oven to 325F. In a large bowl, beat the egg whites until they are foamy (not stiff).
  2. Add the cream of tartar, and beat until stiff.
  3. Gradually beat in ½ C of sugar at a time until smoothly combined.
  4. Mix in vanilla.
  5. Mix in Salt.
  6. Gently fold in the flour.
  7. Pour the angel food cake mixture into an angel food tubular pan.*
  8. Bake for 1 hour and 15 minutes, or until the top is nicely browned.
Strawberry Banana Topping
  1. Add 1 lb. sliced strawberries and 3 sliced bananas to a bowl. Mix with 1 Tbsp. lemon juice.
  2. Add to the top of cooled angel food cake. Top with a dollop of whipped cream. Enjoy!
  3. Tips: *For easy cake pan removal, try using parchment paper in the bottom of the pan.

Ingredients
Cake Bars
  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 3 tablespoons pumpkin pie spice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 bananas mashed
  • 8 ounces crushed pineapple
  • 1 cup skim milk
  • 1 cup pecans chopped
Icing
  • 8 ounces whipped topping fat free
  • 1 ounce vanilla pudding mix sugar free, fat free
  • 1/2 cup skim milk

  1. Wash your hands and preparation area.
  2. Preheat oven to 350 Degrees F.
  3. In a large bowl, combine the dry ingredients first. Then add in the mashed bananas, pineapple, and milk until well combined. Fold in chopped pecans.
  4. Pour into a lightly greased 9x13 inch pan and spread evenly. Bake for 30-35 minutes or until an inserted toothpick comes out clean.
  5. After the cake has cooled, combine the thawed whipped topping and skim milk until smooth. Add in pudding mix and mix until well combined.
  6. Store covered and in the refrigerator.

Ingredients
  • 1.5 cups graham cracker crumbs
  • 12 ounces nonfat cream cheese at room temperature
  • 1/4 cup + 2 tablespoons sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1/4 cup water
  • 1 teaspoon plain gelatin powder
  • 1.5 cups fresh or frozen cranberries
  • 1 tablespoon fresh rosemary finely chopped

  1. Wash your hands and clean your preparation area.
  2. Preheat your oven to 350 degrees F.
  3. Line a mini-muffin tin with paper liners. Evenly distribute the graham cracker crumbs in the bottoms of the lined mini-muffin tin.
  4. In a bowl combine the cream cheese, 2 tablespoons sugar, vanilla extract, and eggs until well combined and smooth. Evenly distribute the cream cheese mixture among the mini-muffins. Bake in the oven for 12 minutes.
  5. While the mini-muffin tin is in the oven, in a saucepan, begin to heat the cranberries, sugar, water and rosemary, continuously mashing and stirring. Once it has broken down, add in the gelatin. Remove from heat and continue stirring.
  6. Once the cream cheese mixture is done cooking, top with the cranberry mixture. Cover and chill until the bites have set. Store in the fridge.
  7. Enjoy!
