Ingredients
  • 1/2 Cup Medjool dates pitted and chopped
  • 1/2 Cup unsweetened applesauce
  • 1/4 Cup unsweetened almond milk
  • 1/2 Tablespoon vanilla extract
  • 1/4 Tablespoon Avocado Oil
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 bananas
  • 2 Cups baby spinach
  • 2 Cups oat flour
  • 1 Cup strawberries

Instructions
  1. Preheat oven to 350 degrees F and line a mini muffin tin with muffin liners or parchment paper
  2. Soak dates in a bowl of boiling water for 4-5 minutes or until softened.
  3. Add the soaked dates to a blender with the applesauce, almond milk, and vanilla extract.
  4. Blend on high until mixture comes together.
  5. Next add the avocado oil, baking soda, sea salt, cinnamon, nutmeg, bananas, baby spinach and oat flour to the blender and blend on high until well combined.
  6. Wash and dry strawberries.
  7. Gently fold in diced strawberries to combined mixture.
  8. Spoon the mixture into the prepped muffin tins and bake for 20-25 minutes. Transfer to a cooling rack until cool.
  9. Store muffins for up to 5 days in a sealed container in the fridge.

Ingredients
  • ¾ Cup unsweetened applesauce
  • 2 egg whites (1/4 cup)
  • 2 Tablespoons brown sugar
  • 1 Tablespoons orange zest
  • 1/2 Cup 100% orange juice
  • ½ Cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 Cup chia seeds
  • 4 Cups rolled “old fashion” oats
  • 1/4 teaspoon baking soda
  • 1/2 Cup dried cranberries
  • 1/2 Cup pecans chopped

  1. Preheat oven to 350°F and spray a 9x9 casserole dish with nonstick cooking spray.
  2. In a small bowl whisk applesauce, egg whites, and brown sugar until combined.
  3. To the mixture add orange zest, orange juice, almond milk, vanilla extract, and chia seeds. Mix until combined and set aside.
  4. In a large bowl add rolled oats, baking soda, dried cranberries, and pecans. Stir until mixed.
  5. Add the liquid mixture to the dried oat mixture and stir until combined.
  6. Pour mixture into the prepared casserole dish and bake in preheated oven for 25 to 30 minutes or until set. Serve warm or once cooled cut into to 12 pieces and store in an airtight container in the refrigerator for up to five days.

Ingredients
  • 2 cups almond flour
  • 1 cup almond butter
  • 1/4 cup egg whites
  • 1 tablespoon maple syrup
  • 1 tablespoon unsweetened almond milk
  • 1/2 teaspoon vanilla extract

  1. Preheat oven to 350 degrees.
  2. Mix together almond butter, almond milk, maple syrup, vanilla extract, and egg whites in a large bowl.
  3. Then add almond flour into the mix. Keep mixing until the batter is thick and sticky.
  4. Prep cooking sheet pan with either parchment paper or spray with non-stick baking spray.
  5. Roll 12 dough into balls approximately 2 Tablespoons in size. Place each ball on your prepared baking tray/ cookie sheet.
  6. Then flattened balls with a fork to form a cookie shape.
  7. Place in oven and bake for 10 minutes then enjoy!

Ingredients
  • 1 cup steel-cut oats
  • 2 1/2 cups water
  • 1 1/2 cups unsweetened almond milk
  • 1 cup pumpkin puree see notes on how to make your own pumpkin puree
  • 3 Tablespoons Tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

  1. Add all the ingredients into slow cooker and mix well. Cook on low for 6-8 hours. If you have a programmable slow cooker, set it to cook on low for 7 hours and then switch to warm.
  2. After cooking, give the mixture a good stir as the oats will settle to the bottom. Portion into a bowl and serve.
  3. Optional: top with pecans, maple syrup and almond milk.

Ingredients
  • 1/4 cup almonds sliced
  • 4 cups unsweetened almond milk
  • 1/4 cup cocoa powder
  • 1/4 cup Splenda Sugar Blend
  • 1/2 teaspoon coconut extract
  • 1/2 cup fat-free whipped topping

  1. Add almonds to a dry sauté pan over medium-high heat and sauté until lightly toasted. Set aside to cool.
  2. Add almond milk, cocoa powder, Splenda, and coconut extract to a blender and blend until incorporated and slightly foamy.
  3. Add hot chocolate mixture to a saucepan over medium heat and bring to a simmer.
  4. Add one cup of hot chocolate to a coffee mug, top with 2 tablespoons whipped topping and sprinkle with 1 tablespoon cooled, toasted almonds.
