Ingredients
  • 15 piece mini fillo shells frozen
  • 1/4 cup liquid egg substitute fat free
  • 3 tablespoons dark brown sugar
  • 1/2 tablespoon whipped butter or light buttery spread room temperature
  • 1/8 teaspoon cinnamon
  • 1 drop vanilla extract
  • 1/8 teaspoon salt
  • 2 tablespoon walnuts divided
  • 2 tablespoons pecans divided

Instructions
  1. Preheat oven to 375 degrees F.
  2. Spray a baking sheet with nonstick spray or line with parchment paper.
  3. In a medium bowl, combine egg substitute, brown sugar, butter, vanilla extract, cinnamon and salt. Mix well.
  4. Stir in 1 tablespoon chopped pecans and 1 tablespoon chopped walnuts into mixture. Arrange shells and evenly distribute the mixture evenly among the fillo shells.
  5. Combine remaining nuts and sprinkle them on the top of the shells (a little less than 1/2 teaspoon per shell).
  6. Bake in the oven until edges are crips, 15-18 minutes.
  7. Allow to cool slightly before serving. If you like, top each piece with a squirt of fat free whipped cream topping. Enjoy! Note: nutritional information does not include optional fat free whipped topping.

Ingredients
  • 7 ounces Cheesecake Flavor Instant Pudding Mix (2 packets)
  • 4 cups 2% milk
  • 30 ounces 100% pumpkin puree canned
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 3/4 teaspoon ground ginger
  • 1 whole prepared angel food cake
  • 1.5 cups pecan pieces toasted
  • 1 ounce dark chocolate at least 60% cocoa, chopped

  1. Wash hands and clean the preparation area. Rinse lids of cans before opening.
  2. Prepare the pudding according to package directions, chill to set while preparing other ingredients.
  3. Combine the pumpkin puree and spices – cinnamon, cardamom, cloves, and ginger.
  4. Slice the angel food cake into bite-size pieces.
  5. In a large glass trifle dish, (or for a dish that is taller and slimmer than it is wide) layer the ingredients as follows: pudding, pumpkin mixture, pecans, angel food cake, pudding, pumpkin mixture, pecans, chocolate, angel food cake, pudding, pumpkin mixture, pecans chocolate.
  6. Chill for at least 20 to 30 minutes and serve. Trifle can be kept for 2-3 days in the refrigerator, but its best eaten the day it’s made.

  • 2.5 cups pumpkin puree
  • 2 teaspoons pumpkin pie spice

Ingredients
  • 1 pound pecan halves
  • 1/2 cup white granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg white
  • 1 Tablespoon vanilla extract

  1. Preheat the oven to 300 Degrees F.
  2. Line a baking sheet with either parchment paper or a silicone baking mat.
  3. In a bowl, combine the sugar, salt and cinnamon.
  4. In a large bowl combine the egg white, and the vanilla extract. Add the pecan halves and toss to coat the pecans in the egg white mixture.
  5. Sprinkle the sugar mixture overtop the pecans and toss again to coat.
  6. Spread pecans in a single layer on the lined baking sheet.
  7. Bake in preheated oven for 20 minutes. Stir and spread out again and bake for another 20 minutes. Remove from the oven and let cool completely before moving. Once completely cooled stir and break apart nut clusters.
  8. Store in an airtight container for up to a week.
