Apricot Nut Bars

Our quick and easy Apricot Nut bars are the perfect weekday snack! They are loaded with different textures and even some chocolate! Just pop them in the fridge for 45 minutes, and they are ready to cut and enjoy!

Ingredients
  • 1 cup Medjool dates pitted
  • 1 cup dried apricots
  • 2 Tablespoons chia seeds
  • 1/4 teaspoon cinnamon
  • 1 cup raw pumpkin seeds (pepitas)
  • 1 1/2 cup white chocolate chips
  • 1/4 cup semi-sweet chocolate chips for drizzle
  • 1/4 teaspoon nutmeg
  • 1 cup almond pieces
  • 2 Tablespoons hemp seeds

Instructions
  1. Wash hands and clean and sanitize the food preparation area.
  2. Line an 8×8 square pan with wax or parchment paper.
  3. Place dates, apricots, chia seeds, cinnamon, nutmeg, and almond pieces in a food processor and process until well combined
  4. Use a spatula to scrape the mixture off the sides of the food processor.
  5. Add pepitas to the mixture in the food processor, and pulse until there are small pieces of pepitas.
  6. Use a spatula once again to break up the mixture.
  7. Add white chocolate chips and pulse a few times to break and distribute the chips slightly.
  8. Empty the mixture into the prepared pan and press the mixture into the pan until even.
  9. Refrigerate for 30-45 minutes, then slice into bars or squares.
  10. Place the chocolate chips in a microwave-safe bowl and heat for 30 seconds or until melted. Drizzle the melted chocolate over the refrigerated bars.

Ingredients
  • 4 medium tomatoes
  • 6 apricots
  • 1/2 medium red onion
  • 1/4 cup red wine vinegar
  • 1 1/2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/3 cup goat cheese crumbles
  • 1/4 cup almonds sliced

  1. Wash your hands and clean your preparation area. Rinse all fruits under cool running water to remove dirt and debris.
  2. Slice tomatoes and apricots into bite-sized wedges and place in a large bowl.
  3. Slice the red onion into very thin strips and place them in the bowl as well.
  4. In a small bowl, combine the vinegar, honey, and mustard until smooth and combined. Pour vinegar dressing over the tomato combination and stir to evenly distribute.
  5. Top with goat cheese and almonds just before serving.

Ingredients
  • 1 pie crust pre-made
  • 2 cup fruit blueberries, blackberries, cherries, pears, apples, raspberries, apricots, and plums work best
  • 1 cup 2% milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sugar
  • 1/2 cup all-purpose flour

  1. In a 9x9 round baking pan, place the pre-made pie crust and press down to mold it to the pan.
  2. Place your fruit of choice evenly around the bottom of the pan. For fruit like blueberries, blackberries, raspberries, and cherries just rinse and dry the fruit. For fruit like pears, apples, and plums, you will want to wash, core, and slice the fruit, and peel if you prefer.
  3. In a large bowl mix the milk, eggs, vanilla, sugar, and flour together. Then pour evenly over fruit and crust.
  4. Bake in the oven at 375 degrees for 35 to 40 minutes or until an inserted fork comes out clean.

  • 15 ounces canned apricots in water drained and sliced
  • 2 cups blueberries fresh
  • 2 cups low fat vanilla Greek yogurt
  • 1/2 cup low-fat granola
  • 2 Tablespoons silvered almonds slivered

  1. Clean your hands and your preparation area before you begin.
  2. Gather 4 bowls, jars or glasses to assemble the individual parfaits in.
  3. Spoon 1/4 cup of yogurt into each glass, top each serving with 1/4 cup of blueberry and apricot combination, and 1 1/2 Tablespoons granola. Repeat the layers. Top with granola and silvered almonds.
  4. Serve chilled.
