Ingredients
  • 1 15 ounce Italian-style diced tomatoes unsalted
  • 2 cups whole wheat penne pasta dry
  • 1 cup water
  • 3 cups baby spinach leaves
  • 1 cup mozzarella cheese shredded, reduced fat

Instructions
  1. Bring tomatoes, pasta and water to a boil in a large saucepan; stir.
  2. Cover; simmer on medium-low heat for 10 minutes or just until pasta is tender.
  3. Add ½ of spinach; simmer, covered 2 minutes or until wilted. Stir.
  4. Repeat until remaining spinach is added.
  5. Serve topped with cheese.
  6. For a spicier dish, add ¼ teaspoon crushed red pepper flakes with the tomatoes.

Ingredients
  • 2 teaspoons olive oil
  • 1 pound fresh sugar snap peas strings removed
  • 1 tablespoon chopped fresh mint leaves
  • 1 tablespoon fresh lemon juice

Instructions
  1. Wash your hands and clean your cooking area.
  2. Wash sugar snap peas and remove strings.
  3. Heat skillet to medium-high heat; add olive oil.
  4. Add the snap peas to the skillet and sauté until just tender (about 8-10 minutes).
  5. Remove from heat and stir in mint.
  6. Drizzle lemon juice on top. Toss lightly.

Ingredients
  • 3/4 cup wasabi peas about 3 ounces
  • 1 16 ounce salmon filet
  • 1 tablespoons lime zest
  • 2 tablespoons olive oil divided
  • juice from one lime

Instructions
  1. Preheat oven to 400°F.
  2. Blend wasabi peas in processor until ground but with some coarsely crushed pieces.
  3. Lightly oil rimmed baking sheet.
  4. Arrange salmon fillet,skin side down,on prepared baking sheet.
  5. Press ground wasabi peas onto tops of salmon fillet to adhere, covering top completely.
  6. Sprinkle lime zest over salmon; drizzle with 1 tablespoon oil.
  7. Bake salmon just until opaque in center, about 15 minutes.
  8. Squeeze juice from the lime over the cooked salmon.
