Ingredients
  • 1 pound brussels sprouts quartered
  • 2 Tablespoons olive oil
  • 2 Tablespoons Balsamic Glaze
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Oven Instructions
  1. Preheat oven to 400 Degrees F.
  2. In a bowl place the quartered brussels sprouts.
  3. Toss with olive oil and balsamic glaze until covered. Toss in the garlic powder, salt, and pepper.
  4. Grease a baking sheet or cover it in foil or parchment paper. Place the brussels sprouts in a single layer on the sheet and bake for 20 minutes.
  5. Remove and enjoy.
Air Fryer
  1. In a bowl place the quartered brussels sprouts.
  2. Toss with olive oil and balsamic glaze until covered. Toss in the garlic powder, salt, and pepper.
  3. Place brussels sprouts in a single layer in the air fryer basket.
  4. Cook at 375 degrees for 14 minutes.
  5. Remove and enjoy.

Ingredients
  • 2 teaspoons olive oil
  • 4 medium yellow onion sliced thin
  • 2 Tablespoons water
  • 2 Tablespoons minced garlic
  • 4 pound beef chuck roast fat trimmed
  • 1/3 cup balsamic vinegar
  • 2 cups low-sodium beef broth
  • 2 Tablespoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons resh thyme

Instructions
  1. In a skillet heat the olive oil over low to medium heat, add the onions and cook until the onions are almost caramelized. Use up to 2 tablespoons of water to help in the cooking process if onions start to stick to the pan. This takes about 30-35 minutes.
  2. In a slow cooker place the beef roast, caramelized onion, and garlic.
  3. Add the balsamic vinegar, beef broth, worcestershire sauce, salt, pepper and fresh thyme.
  4. Cook on high for 4-6 hours or on low for 8-10 hours.
  5. Note: the onions can be caramelized the day before and stored in the refrigerator until ready to add to the slow cooker.

  • 1 pound slow cooker barbecue Chicken
  • 1 cup BBQ sauce
  • 1 cup frozen corn kernels
  • 2 cups white rice cooked
  • 15 ounce can black beans drained and rinsed
  • 1/2 medium red onion diced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 cups reduced-fat cheddar cheese, shredded and divided
  • 1 cup crushed tortilla chips
  • 1/2 cup green onion tops sliced

  1. Preheat your oven to 350 Degrees F.
  2. In a large bowl combine the slow cooker barbecue chicken, barbecue sauce, corn, rice, black beans, and red onion, garlic powder, salt, and black pepper.
  3. Add 1 cup of cheddar cheese and mix until well combined.
  4. In a 9x13 inch casserole dish spread the mixture into an even layer. Top with the crushed tortilla chips and remaining ½ cup cheese.
  5. Bake for 30-35 minutes or until casserole reaches a minimum internal temperature of 165 Degrees F.
  6. Remove and serve topped with green onion.

Ingredients
  • 8 large eggs
  • 3/4 cup 1% Milk
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup lean cured ham diced
  • 1/2 cup reduced fat cheddar cheese shredded
  • 1/2 cup lowfat monterey jack cheese shredded
  • 1 cup diced frozen potatoes

  1. Wash your hands and clean your preparation area.
  2. Preheat your oven to 375 Degrees F.
  3. In a large bowl whisk the eggs and milk together until well combined. Add in mustard and spices and continue to whisk until blended.
  4. Next, add in the diced ham, shredded cheese, and diced potatoes.
  5. Spray a pie dish with nonstick cooking spray. Add egg mixture to the dish and use a spoon to even out the mix-ins.
  6. Cook in the oven for 45 minutes or until the egg is set. Remove from the oven and let set for 10 minutes.
