Ingredients
  • 1 (15 ounce) can low sodium black beans drained and rinsed
  • 1 (15 ounce) can pineapple tidbits in natural juice drained but reserve juice
  • 1 cup diced bell pepper
  • 6 green onions thinly sliced
  • 1/4 cup cilantro leaves chopped
  • 1/4 cup reserved pineapple juice
  • 1 tbsp canola oil
  • 1 seeded jalapeno pepper minced

  1. 1. Combine all ingredients in a bowl.

Ingredients
  • 2 medium apples
  • 1/2 cup celery chopped
  • 1 tbsp orange juice
  • 1/4 cup low fat vanilla Greek yogurt
  • 1/2 cup rasins
  • 1/4 cup walnuts chopped
Servings: 1/2 cup

  1. Wash, core, and dice the apples. Place the apples in a large mixing bowl with the orange juice and mix well. Add all other ingredients to the apples and toss gently.
