Italian Shrimp Fettucini

- 3/4 cup wasabi peas about 3 ounces
- 1 16 ounce salmon filet
- 1 tablespoons lime zest
- 2 tablespoons olive oil divided
- juice from one lime

- Preheat oven to 400ยฐF.
- Blend wasabi peas in processor until ground but with some coarsely crushed pieces.
- Lightly oil rimmed baking sheet.
- Arrange salmon fillet,skin side down,on prepared baking sheet.
- Press ground wasabi peas onto tops of salmon fillet to adhere, covering top completely.
- Sprinkle lime zest over salmon; drizzle with 1 tablespoon oil.
- Bake salmon just until opaque in center, about 15 minutes.
- Squeeze juice from the lime over the cooked salmon.
Grilled Tilapia Burgers

- 2 (8 ounce) tilapia filets cut in half horizontally
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 4 whole-wheat hamburger buns
- 1 cup coleslaw mix with dressing included
- 1/2 cup crushed pineapple drained
- 1/4 teaspoon pepper
- 1/4 teaspoon sea salt

- Spray a non stick skillet with non-stick spray and heat.
- Place tilapia in the skillet and sprinkle with onion powder, cracked pepper, and sea salt and grill. Grill on each side for about 5 minutes, and after flipping the first time, sprinkle the opposite side with onion powder, garlic powder, cracked pepper, and sea salt. To test doneness, ensure that fish flakes easily.
- Wile tilapia is cooking, combine coleslaw mix, dressing, and crushed pineapple in a medium sized bowl. Mix until combined.
- Top half of whole wheat hamburger bun with one cooked tilapia filet, and 1/4th prepared pineapple coleslaw and other half of hamburger.
Mustard Crusted Fish

- 3 tablespoons mayonnaise fat free
- 2 tablespoons grated Parmesan cheese reduced fat, divided
- 1 tablespoon lemon juice
- 2 teaspoons dijon mustard
- 1 teaspoon horseradish
- 4 4 ounce tilapia fillets
- 1/4 cup dry bread crumbs
- 1 tablespoon butter melted

- Preheat oven to 425 degrees.
- In a small bowl, combine mayonnaise, 1 tablespoon cheese, lemon juice, mustard and horseradish. Place fillets on a baking sheet coated with cooking spray. Spread mayonnaise mixture evenly over fillets.
- In a small bowl, combine bread crumbs, melted butter and remaining cheese. Sprinkle over fillets. Lightly spray each fillet with cooking spray.
- Bake for 13-18 minutes or until fish flakes easily with a fork.
