Although their interesting shape, white skin, and black eye make them a household favorite at the beginning of the year, this tiny little bean can be pleasantly enjoyed year round.

Ingredients
  • 1 tablespoon olive oil
  • 2 tablespoon minced garlic
  • 1 red Chile pepper thinly sliced and seeded for less heat
  • 1/4 teaspoon pepper
  • 3/4 pound medium-sized frozen or fresh shrimp peeled and deveined
  • 1/2 cup no sodium low fat chicken broth
  • 4 cups fresh spinach
  • 8 ounces thin spaghetti or angel hair pasta

Instructions
  1. In large stock pot, bring water to a boil for pasta; add pasta when boiling.
  2. Cook pasta according to package directions.
  3. Heat oil in a large skillet over medium heat.
  4. Add the garlic, Chile and pepper. Add shrimp and cook for 2 minutes.
  5. Turn shrimp, add the chicken broth and bring to a boil.
  6. Reduce heat and simmer until the shrimp are opaque throughout, 2 to 3 minutes.
  7. Add the spinach and cook, tossing, until beginning to wilt, 1 to 2 minutes.
  8. Drain pasta and mix in large skillet with shrimp and spinach, about 1 to 2 minutes.
  9. Serve immediately..

Ingredients
  • 8 ounces whole wheat spaghetti
  • 1/2 teaspoon minced garlic
  • 1 1/2 teaspoon chili pepper flakes
  • 1 1/2 tablepsoon olive oil
  • 1/2 teaspoon black pepper
  • 1 6 ounce can of tomato paste
  • 1 pound cooked grilled chicken breast, cut into strips

  1. Cook spaghetti according to the directions on the package, until it is al dente.
  2. Strain spaghetti and place in a large serving dish.
  3. Add minced garlic, chili pepper flakes, olive oil, and pepper, and tomato paste and mix together well.
  4. Grill chicken breasts, cut into strips, and stir into spaghetti.

Ingredients
  • 3/4 cup red wine vinegar
  • 1/4 cup chili sauce
  • 1/4 cup Worcestershire sauce
  • 1 6 ounce can can tomato paste unsalted
  • 1/2 cup onion diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cayenne pepper
  • Nonstick cooking spray
  • 8 chicken breast boneless, skinless

Instructions
  1. Preheat the oven to 350 degrees F. In a bowl, blend vinegar, chili sauce, Worcestershire sauce, and tomato paste. Mix in the onion, brown sugar, and cayenne pepper.
  2. Spray a skillet with nonstick cooking spray and heat over medium heat. Saute the chicken thighs on both sides until browned.
  3. Remove from heat, drain, and arrange in a medium baking dish. Cover with cider vinegar mixture.
  4. Bake 40 minutes or until the internal cooking temperature measures 165 degrees F.
