This simple yet fresh Berry Caprese Salad is a perfect salad for when strawberries and blueberries are in season. Can be eaten as a side dish or have grilled chicken added to it to make it a main dish. Enjoy one of our favorite summer inspired salads!

Ingredients
  • 1/2 Cup balsamic vinegar
  • 2 Cup fresh strawberries sliced
  • 1 Cup fresh blueberries
  • 1/2 Cup fresh basil chopped
  • 1 Cup fresh mozzarella cubed
  • 1/4 Cup sliced almonds
  • 1 Tablespoon olive oil
  • 6 Cup Spring Mix Salad

  1. Pour balsamic vinegar into a small saucepan. Bring to a gentle boil over low heat; cook 15 minutes or until reduced to a thick glaze. Allow to cool.
  2. Place strawberries, blueberries, mozzarella, almonds and basil on top of spring mix salad. Drizzle with olive oil and balsamic glaze.

Ingredients
  • 6 cups mixed greens (spinach, kale, and lettuce) pre-washed
  • 1 teaspoon olive oil
  • juice of 1/2 lemon
  • Zest of 1 lemon
  • 1 cup fresh blueberries washed
  • 6 tablespoons goat cheese crumbled

  1. Wash your hands and clean your food preparation area.
  2. Wash all produce and fruits before preparing the salad.
  3. Place the mixed greens in a bowl. (If you don’t have mixed greens, use what greens you have on hand.)

  5. Divide among 6 servings and top each serving with 1 tablespoon of goat cheese.

  • 15 ounces canned apricots in water drained and sliced
  • 2 cups blueberries fresh
  • 2 cups low fat vanilla Greek yogurt
  • 1/2 cup low-fat granola
  • 2 Tablespoons silvered almonds slivered

  1. Clean your hands and your preparation area before you begin.
  2. Gather 4 bowls, jars or glasses to assemble the individual parfaits in.
  3. Spoon 1/4 cup of yogurt into each glass, top each serving with 1/4 cup of blueberry and apricot combination, and 1 1/2 Tablespoons granola. Repeat the layers. Top with granola and silvered almonds.
  4. Serve chilled.

Jicama is a root vegetable that resembles a turnip. This vegetable is usually eaten raw and is a great alternative for chips. Season jicama with chili powder and a dash of salt for dips or dice them for salads.

Ingredients
Dressing
  • 3 Tablespoons lime juice
  • 2 teaspoons honey
  • 1 Tablespoon fresh mint chopped
  • 1 cup strawberries diced
  • 1 cup fresh blueberries
  • 3/4 cup jicama diced

  1. Whisk lime juice, honey and fresh mint into a small bowl.
  2. Place all fruit in large bowl and pour dressing over fruit. Cover and refrigerate for at least 1 hour and enjoy!
How to cut Jicama
  1. You will need a sharp knife, cutting board, vegetable peeler.
  2. Wash and peel jicama with a vegetable peeler.
  3. Cut 1/4 of an inch slices of the jicama and then cut those slices into matchsticks. You can then use these to dip into guacamole or other dips instead of chips or dice them to use in salads.
