- 2 cups non-fat vanilla yogurt
- 1 cup strawberries hulled
- 1 cup blueberries
- 1/4 cup coconut milk
- Wash your hands and clean your preparation area.
- Run your strawberries, blueberries and the top of the can of coconut milk under cool running water.
- Blend 1 cup of the yogurt and the strawberries together in a blender until smooth. Reserve strawberry mixture.

- In popsicle mold evenly distribute coconut milk, then strawberry mixture, then blueberry mixture. Freeze for a minimum of 3 hours. Store in the freezer for up to 1 week.

Pomegranate Fruit Salad
This unexpected combination of fruit makes for a refreshing and crisp salad to compliment any main course.
- 2 cups green apples rinsed and diced
- 2 cups strawberries rinsed and thinly sliced
- 2 cups blueberries rinsed
- 1 cups cherries rinsed, pitted and sliced
- 1/2 cup pomegranate arils
- 1 tablespoon fresh mint chopped
- 2 tablespoon lime juice
- 2 tablespoon honey
- Combine fruit in a large bowl.
- Sprinkle chopped mint over fruit
- Drizzle with honey and lime.
- Toss to combine
- Store in the refrigerator.
Berry Cherry Tart
This summer tart is perfect for dessert, brunch, and even festive enough for the Fourth of July. Our Berry Cherry Tart is lighter than other cheesecake pastries but equally delicious.
- 1 frozen pastry puff thawed
- 1 cup non-fat vanilla yogurt
- 3 tablespoon s Cheesecake flavored instant pudding mix
- 3/4 cup fresh blueberries
- 3/4 cup fresh cherries pitted and halved
- Remove pastry puff from freezer, let thaw for 15-20 minutes. Preheat oven to 400 degrees F.
- Prepare a baking sheet with parchment paper and unfold pastry puff on the baking sheet.
- Using a sharp knife, score a 1 ½ inch border around the edge of the pastry sheet. Do not cut all the way through. Prick the center of the sheet thoroughly using a fork.
- Bake in the oven for 10-12 minutes until golden. The pastry will puff in the oven, remove, and let cool. Carefully press down the center of the puff sheet that is puffed with your fingers.
- In a medium bowl, mix together yogurt and 3 Tbsp of the instant pudding mix.
- Pour pudding mixture in the center of cooled pastry, spreading evenly.
- Top with fresh blueberries and cherries.
- Serve immediately, or store in the refrigerator covered for 1 day to minimize soggy crust.
Blueberry and Broccoli Salad
Get a boost of antioxidants with this delicious Blueberry and Broccoli Salad. This easy-to-pull together side salad is perfect to compliment any main course.
- 3 cups fresh broccoli chopped
- 3/4 cup blueberries
- 1/2 cup low sodium mozzarella cheese diced
- 1/4 cup whole walnuts chopped
- 1/4 cup sucralose sweetener
- 1 tablespoon apple cider vinegar
- 3/4 cup non-fat plain greek yogurt
- Clean and prep your area.
- Wash broccoli and blueberries under cool running water.
- Chop broccoli and walnuts into small pieces.
- Dice mozzarella cheese into small pieces.
- Place chopped broccoli, walnuts, mozzarella cheese and blueberries in a large bowl.
- In small bowl mix together yogurt, sweetener and vinegar.
- Toss the dressing into the broccoli salad mixture until well combined.
- Serve and enjoy!
