Ingredients
- 1 cup sugar
- ½ cup nonfat greek yogurt
- 1 tablespoon vanilla extract
- 2 eggs
- ½ cup 2% milk
- 2 cup whole wheat flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup brown sugar
- 2 tablespoon butter
- 1 tablespoon cinnamon
- 1 cup coarsely chopped pecans

- Begin by mixing sugar, milk, yogurt, eggs, and vanilla together until well combined.
- In a separate bowl mix together flour, baking powder and salt until well combined.
- Slowly add dry mixture to the wet mixture and make sure it is well combined.
- Pour into a greased 9x13 inch pan.
- Combine brown sugar, cinnamon and pecans and melted butter.
- Sprinkle evenly on top of the unbaked batter.
- Bake in an oven at 350 degrees for 30 to 35 minutes.
Mustard Crusted Fish
Ingredients
- 3 tablespoons mayonnaise fat free
- 2 tablespoons grated Parmesan cheese reduced fat, divided
- 1 tablespoon lemon juice
- 2 teaspoons dijon mustard
- 1 teaspoon horseradish
- 4 4 ounce tilapia fillets
- 1/4 cup dry bread crumbs
- 1 tablespoon butter melted

- Preheat oven to 425 degrees.
- In a small bowl, combine mayonnaise, 1 tablespoon cheese, lemon juice, mustard and horseradish. Place fillets on a baking sheet coated with cooking spray. Spread mayonnaise mixture evenly over fillets.
- In a small bowl, combine bread crumbs, melted butter and remaining cheese. Sprinkle over fillets. Lightly spray each fillet with cooking spray.
- Bake for 13-18 minutes or until fish flakes easily with a fork.
