Ingredients
  • 1 lb lean beef roast
  • 1 cup salsa verde
  • 1 cup low-sodium beef broth
  • 2 russett potatoes
  • 1 tsp olive oil
  • 1 tsp pepper
  • 3 eggs

Instructions
  1. Place the lean beef roast, the salsa verde, and low sodium beef broth in a slow cooker. Cook on low for 6 hours.
  2. Wash, dry, and chop 2 russett potatoes. Coat with 1 tsp of olive oil and 1 tsp of pepper. Roast for 20 to 30 minutes on 400 degrees F or until cooked.
  3. Scramble 3 eggs, and shred the beef.
  4. Evenly distribute the potatoes, eggs, and the beef between 6 storage containers. Store in the fridge for up to 6 days.

Ingredients
  • 1 pie crust pre-made
  • 2 cup fruit blueberries, blackberries, cherries, pears, apples, raspberries, apricots, and plums work best
  • 1 cup 2% milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sugar
  • 1/2 cup all-purpose flour

  1. In a 9x9 round baking pan, place the pre-made pie crust and press down to mold it to the pan.
  2. Place your fruit of choice evenly around the bottom of the pan. For fruit like blueberries, blackberries, raspberries, and cherries just rinse and dry the fruit. For fruit like pears, apples, and plums, you will want to wash, core, and slice the fruit, and peel if you prefer.
  3. In a large bowl mix the milk, eggs, vanilla, sugar, and flour together. Then pour evenly over fruit and crust.
  4. Bake in the oven at 375 degrees for 35 to 40 minutes or until an inserted fork comes out clean.

Ingredients
  • 2 tablespoons canola oil
  • 1 tablespoon garlic clove minced
  • 1 cup onion chopped
  • 1 (8 ounce) package mushrooms sliced
  • 1 (6 ounce) package spinach fresh
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup reduced fat cheddar cheese shredded
  • 5 eggs medium to large

  1. Preheat oven to 350*F.
  2. Spray a 9-inch pie pan with cooking spray.
  3. Heat oil and garlic in a large skillet over medium-high heat until garlic is soft and oil is infused.
  4. Add onions and mushrooms to the skillet. Cook until veggies are soft.
  5. Add Spinach to the skillet until lightly wilted.
  6. In a bowl, combine eggs, cheese, salt, and pepper.
  7. Add Spinach mixture and stir to blend.
  8. Pour into prepared pan.
  9. Bake until eggs have set, about 30 minutes or until knife inserted in center comes clean.
  10. Allow it to set up and cool for 10 minutes before serving.

  • 10 oz fresh spinach
  • 2 cups frozen red potatoes thawed and chopped
  • 1/3 cup fat-free milk
  • 4 egg whites
  • 4 eggs
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp dry bread crumbs
  • 1/2 cup shredded mozzarella cheese reduced fat

  1. Preheat oven to 350 degrees. Add oil to a salute pan over medium heat. Add leek and sauté 4 minutes. Add spinach and potatoes; sauté for 2 minutes or until spinach wilts.
  2. Combine milk, seasoning, salt and pepper, 4 eggs and 4 egg whites; stir well with a whisk. Add leek mixture. Pour into a 9.5 inch round baking dish or pie plate coated with cooking spray.
  3. Sprinkle with cheese and breadcrumbs. Bake at 350 degrees fro 20-25 minutes. For a golden brown top, broil for 4 minutes after baking.
