Blackberry Basil Iced Green Tea

If you’re looking for a crisp green tea for your next afternoon pick-me-up, look no further! This lightly caffeinated drink with bright flavors of blackberries is a great hot weather treat.

Ingredients
  • 48 ounces water divided
  • 6 bags green tea
  • 1 cup Blackberries crushed
  • 1.5 Tablespoons honey
  • 1/3 cup fresh basil leaves chiffonade
  • Juice of 2 limes

Instructions
  1. Clean your preparation area, and rinse fresh herbs and fruits before cutting.
  2. In a saucepan, bring 20 ounces of water to boil then remove from heat. Let tea bags steep for about 4 minutes or until desired strength.
  3. Pour into a pitcher and add honey, remaining 28 ounces of water, blackberries, basil, and lime juice.
  4. Place in the refrigerator for at least 2 hours or until cold.
  5. Serve over ice with blackberries and basil leaves from the pitcher as garnish.

Green Tea caffeine = 30-50 mg per serving

Vinaigrette Dressing
  • 2 tablespoons Agave syrup
  • 1 lime juice fresh squeezed
  • 1 tablespoon extra virgin olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
Salad
  • 4 cups seedless watermelon diced
  • 4 cups fresh spinach
  • 1 1/2 cup cucumber diced
  • 1/4 cup fresh mint leaves torn
  • 1/3 cup fresh basil leaves torn
  • 1/3 cup reduced fat feta cheese crumbles

  1. Clean preparation area and wash hands.
  2. Wash all produce before preparing recipe.
  3. In a small bowl, add agave, lime, oil, salt, and pepper and whisk together.
  4. In a large bowl, add watermelon, spinach, cucumber, mint, basil, and feta.
  5. Add dressing mixture and gently toss to combine.
  6. Refrigerate if not served immediately.
  7. Serve dish immediate or cover and keep cool for later.
