A springtime twist on a fruit cake, these iced fruit cake bars feature more tropical fruits along with some delicious icing! The star of this recipe really is the ultra fluffy icing that tops off these dense cake bars.

Ingredients
Cake Bars
  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 3 tablespoons pumpkin pie spice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 bananas mashed
  • 8 ounces crushed pineapple
  • 1 cup skim milk
  • 1 cup pecans chopped
Icing
  • 8 ounces whipped topping fat free
  • 1 ounce vanilla pudding mix sugar free, fat free
  • 1/2 cup skim milk

Instructions
  1. Wash your hands and preparation area.
  2. Preheat oven to 350 Degrees F.
  3. In a large bowl, combine the dry ingredients first. Then add in the mashed bananas, pineapple, and milk until well combined. Fold in chopped pecans.
  4. Pour into a lightly greased 9x13 inch pan and spread evenly. Bake for 30-35 minutes or until an inserted toothpick comes out clean.
  5. After the cake has cooled, combine the thawed whipped topping and skim milk until smooth. Add in pudding mix and mix until well combined.
  6. Store covered and in the refrigerator.

Ingredients
  • 15 piece mini fillo shells frozen
  • 1/4 cup liquid egg substitute fat free
  • 3 tablespoons dark brown sugar
  • 1/2 tablespoon whipped butter or light buttery spread room temperature
  • 1/8 teaspoon cinnamon
  • 1 drop vanilla extract
  • 1/8 teaspoon salt
  • 2 tablespoon walnuts divided
  • 2 tablespoons pecans divided

Instructions
  1. Preheat oven to 375 degrees F.
  2. Spray a baking sheet with nonstick spray or line with parchment paper.
  3. In a medium bowl, combine egg substitute, brown sugar, butter, vanilla extract, cinnamon and salt. Mix well.
  4. Stir in 1 tablespoon chopped pecans and 1 tablespoon chopped walnuts into mixture. Arrange shells and evenly distribute the mixture evenly among the fillo shells.
  5. Combine remaining nuts and sprinkle them on the top of the shells (a little less than 1/2 teaspoon per shell).
  6. Bake in the oven until edges are crips, 15-18 minutes.
  7. Allow to cool slightly before serving. If you like, top each piece with a squirt of fat free whipped cream topping. Enjoy! Note: nutritional information does not include optional fat free whipped topping.

Ingredients
  • 6 cups fresh baby spinach
  • 4 Kiwi fruit peeled, cubed
  • 1 cup mandarin oranges canned in juice, drained
  • 1 cup pecans chopped
  • 2 tablespoon nonfat vanilla, Greek yogurt
  • 2 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoon honey
  • 1 teaspoon Poppy seeds

  1. Wash your hands and clean your preparation area.
  2. Wash kiwi fruit with a soft bristle brush and rinse and dry spinach in a colander.
  3. Place spinach in a large serving bowl. Add kiwis, mandarin oranges, and pecans evenly on top of spinach.
  4. In a bowl or jar with a lid add the yogurt, lemon juice, olive oil, honey and poppy seeds.
  5. Whisk or shake dressing mixture until well combined.
  6. Pour over the spinach and fruit.
  7. Serve immediately.

For the salad
  • 1.5 lbs. fresh spinach rinsed and dried
  • 0.5 lb. fresh arugula rinsed and dried
  • 1 1/2 cup red onion sliced
For the vinaigrette
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 Tbsp. honey Juice and zest of 1 Ruby Red grapefruit
Toppings
  • 2 avacados sliced
  • 2 Ruby Red grapefruits peeled, sectioned, and chopped
  • 1/4 cup pecans chopped

  1. 1. Wash your hands and clean your cooking area. 2. In a large bowl, toss together the salad ingredients. Set aside. 3. In a small bowl or container with lid, whisk or shake all of the vinaigrette ingredients. 4. Assemble the toppings over the salad mixture. Top with the vinaigrette and serve.
