Ingredients
  • 1.5 cup liquid egg
  • 3/4 cup skim milk
  • 1/2 teaspoon salt
  • 1/2 cup part skim ricotta
  • 1/3 cup skim shredded mozzarella
  • 1 cup cherry tomatoes halved
  • 2 1/2 cups kale chopped
  • 1 frozen pie crust

Instructions
  1. Clean prep area and preheat oven to 350 degrees
  2. Beat liquid egg with a mixer for about 20 seconds
  3. Add milk and salt to eggs and beat on medium speed until well combined (about 1 minute)
  4. While the eggs are mixing add the kale, tomatoes, ricotta, and mozzarella cheese to pie crust
  5. Pour the egg mixture over all ingredients
  6. Bake for 50 to 55 minutes
  7. Let cool before serving. Cut into 8 slices and enjoy!

Tropical Tapioca Pudding

It’s National Tapioca Day, June 28th! Celebrate by making your own tapioca pudding for dessert tonight. Try this tropical twist on tapioca for a sweet summer time treat.

 

My kids absolutely adore this version of tapioca pudding, the sweet mangos on top add just a bit of extra flavor that makes this pudding taste so good!

Ingredients
  • 1 3/4 cups unsweetened coconut milk
  • 1/2 cup skim milk
  • 1/4 cup instant tapioca pearls
  • 1 tablespoon granulated sugar
  • 1 teaspoon coconut extract
  • 1 cup fresh mango diced

  1. In a medium saucepan, bring the unsweetened coconut milk and skim milk to a slow boil on medium heat. Stir constantly until milk begins to foam.
  2. Pour in tapioca pearls and sugar, stir constantly in a full boil, about 5-10 minutes.
  3. Remove from heat and stir in coconut extract. Cool for 3-5 minutes in saucepan.
  4. Spoon pudding in 4- four ounce dishes. Top pudding with ¼ cup of diced mango. Add mint leaves for a garnish.
  5. Serve immediately or keep chilled in the refrigerator for up to 2 days.

Ingredients
Cake Bars
  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 3 tablespoons pumpkin pie spice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 bananas mashed
  • 8 ounces crushed pineapple
  • 1 cup skim milk
  • 1 cup pecans chopped
Icing
  • 8 ounces whipped topping fat free
  • 1 ounce vanilla pudding mix sugar free, fat free
  • 1/2 cup skim milk

  1. Wash your hands and preparation area.
  2. Preheat oven to 350 Degrees F.
  3. In a large bowl, combine the dry ingredients first. Then add in the mashed bananas, pineapple, and milk until well combined. Fold in chopped pecans.
  4. Pour into a lightly greased 9x13 inch pan and spread evenly. Bake for 30-35 minutes or until an inserted toothpick comes out clean.
  5. After the cake has cooled, combine the thawed whipped topping and skim milk until smooth. Add in pudding mix and mix until well combined.
  6. Store covered and in the refrigerator.

Ingredients
Cake:
  • 1 16.25 ounce box white cake mix
  • 1 ounce Pistachio Sugar-Free/Fat-Free Pudding
  • 6 ounce non-fat greek yogurt vanilla
  • 3 egg whites
  • 1 1/2 cups water
Frosting:
  • 8 ounce container fat free whipped topping thawed
  • 1 cup skim milk
  • 1 ounce Pistachio Sugar-Free/Fat-Free Pudding

  1. Preheat oven to 350 degrees Fahrenheit. Lightly spray a 9 X 11 baking pan with non-stick cooking spray.
  2. In a large bowl, use a mixer to combine cake mix, pudding, yogurt, egg whites and water. Mix together for 2-3 minutes until well blended.
  3. Pour batter into cake pan and bake for 35-40 minutes or until a toothpick inserted comes out clean.
  4. While baking, combine ingredients for frosting. Use a mixer to beat milk and pudding on medium speed. Let rest for a few minutes and fold in thawed whipped topping. Place in refrigerator until cake has cooled.
  5. Top cake with frosting. Serve or store in the refrigerator until ready to enjoy.

For a fun festive St. Patrick’s Day dessert, add some green food coloring to the batter or frosting, or both!

Ingredients
  • 8 ounces linguine pasta
  • 1 cup broccoli florets fresh or frozen
  • 2 cups cooked, chopped chicken breast skinless
  • 15 ounce reduced sodium cream of mushroom soup
  • 1/2 cup skim milk
  • 1/4 cup Parmesan cheese shredded
  • 1/2 teaspoon black pepper

  1. Clean your area and wash your hands before you begin.
  2. Prepare linguine in boiling water according to package directions in 3 quart saucepan. Pasta will take 9-10 minutes to cook.
  3. Add broccoli during the last 4 minutes of cook time.
  4. Drain pasta and broccoli well in colander.
  5. Stir chicken, soup, milk, cheese and black pepper in saucepan until combined and smooth.
  6. Add pasta and broccoli.
  7. Cook until mixture is hot and bubbling, stirring often.
