Ingredients
  • 1 tsp canola oil
  • 1 cup cooked, chopped chicken breast
  • 1 small onion chopped
  • 1 bell pepper chopped
  • 2 stalks celery sliced
  • 1 (15 ounce) can unsalted tomato sauce
  • 1 cup brown uncooked
  • 1 1/4 cup low sodium, reduced fat chicken broth
  • 1/8 tsp cayenne pepper
  • 1/2 tsp chili powder
  • 1 tsp minced garlic

Instructions
  1. Wash your hands and clean your cooking area.
  2. Wash and prepare fresh vegetables as directed above.
  3. Spray a large skillet with non-stick cooking spray or drizzle vegetable oil.
  4. Cook chicken for 2 minutes on medium to medium high heat.
  5. Add onion, bell pepper and celery to skillet.
  6. Continue to cook on medium for an additional 2 minutes or until vegetables are tender.
  7. Add tomato sauce, rice, chicken broth, and spices to the skillet. Bring to a boil, reduce heat to low, and cover.
  8. Continue cooking for an additional 15 minutes or until liquid is absorbed.
  9. Serve immediately.

Ingredients
  • 1/3 cup almond butter
  • 2 Tablespoons honey
  • 1 scoop protein powder vanilla
  • 1 teaspoon unsweetened cocoa powder
  • 3 Tablespoons chia seeds
  • 2 Tablespoons mini semi-sweet chocolate chips

  1. Clean your area and wash your hands before you begin.
  2. Mix all ingredients together in a medium bowl.
  3. Use a small scoop or tablespoon to shape 10 small balls.
  4. Freeze for at least 20 minutes before serving. Enjoy!

Ingredients
  • 1 pound extra lean ground beef 3% fat, 97% lean
  • 1/2 each sliced onion
  • 1/2 each chopped bell pepper
  • 2 cups cooked brown rice
  • 2 cups frozen corn thawed
  • 1 cup salsa
  • 1/2 cup reduced fat cheddar cheese shredded

  1. Wash your hands and clean your cooking area.
  2. Brown ground beef, onion, and bell pepper in skillet.
  3. Drain meat.
  4. Heat cooked rice, meat mixture, corn, and salsa in skillet for 10 to 15 minutes. (Add water as needed to prevent the rice from sticking).
  5. Add cheese and heat until cheese melts (about 5 minutes).

  • 1/2 cup chopped celery
  • 1/2 cup sweet pickle relish
  • 1/4 reduced fat mayonnaise with olive oil
